    BAJAN FISHCAKES
    Episode #21
    DECORATE WITH PARTY TOOTHPICKS
    (USE SOME OF THE BATTER WITH THE MASHED POTATO)
    1 1/2 LBS OR 2 1/4 CUPS OF COD FISH
    1/2 CUP SCALLIONS (CHOPPED)
    1/2 CUP ONION (FINELY CHOPPED)
    1 TBSPN SCOTCH BONNET PEPPER (DESEEDED & CHOPPED FINE)
    1/3 CUP FRESH PARSLEY (CHOPPED)
    1 TBSPN FRESH THYME (CHOPPED)
    1 /2 TBSPN PAPRIKA
    1 TBSPN FRESHLY GROUND BLACK PEPPER
    1/2 TBSPN ADOBO
    1/2 TSPN GROUND CLOVE
    1 TBSPN BAJAN PEPPERSAUCE
    1/4 CUP FRESH MARJORAM
    2 MEDIUM POTATO (COOK AND MASHED W/ A LITTLE BUTTER) (OPTIONAL)
    5 CUPS SELFRISING FLOUR
    4 CUPS WATER
    METHOD
    BOIL THE FISH FOR APPROXIMATELY 20 MINUTES, CHANGE THE WATER AT LEAST ONCE TO GET MOST OF THE SALT OUT.
    WHILE THE FISH IS BOILING COOK THE POTATO (S); WHEN DONE TRANSFER TO A BOWL, MASH WITH A FORK AND ADD A LITTLE BUTTER AND SET ASIDE. WHEN THE FISH IS DONE; THROW OFF THE WATER AND ADD COLD WATER TO THE FISH AND LET SIT FOR A FEW MINUTES TO COOL. THROW OFF THE WATER, CLEAN THE FISH BY DEBONING AND REMOVING SKIN AND TRANSFER TO A BOWL; BREAK UP THE FISH INTO CHUNK SIZE PIECES AND RINSE IN COLD WATER AGAIN. TAKE THE BIG CHUNKS ONE PIECE AT A TIME AND FRIZZ FINELY. ADD ALL THE CHOPPED HERBS, ONIONS, SCALLIONS, HOT PEPPER, SPICES AND MIX WELL TO COMBINE; ADD THE MASHED POTATO AND MIX WELL; ADD THE FLOUR AND MIX WELL THEN ADD THE WATER TO A SOUPY CONSISTENCY BUT NOT TOO SOUPY; MIXING WELL.
    HEAT A MEDIUM SIZE HEAVY DUTY POT ADDING THE VEGETABLE OIL, ENOUGH TO DEEP FRY, SPOON THE BATTER INTO THE HOT OIL AND COOK UNTIL GOLDEN BROWN. WHEN DONE TRANSFER TO A PLATTER WITH WAX PAPER AND PAPER TOWELS. COOL BEFORE SERVING.
    P.S.
    IT MAKE SENSE TO MAKE A LOT OF BATTER AT ONE TIME BECAUSE YOU CAN FREEZE THE BATTER IN PINT SIZE CONTAINERS AND MAKE AT A LATER DATE; ALL YOU NEED TO DO IS DEFROST THE BATTER AND FRY.

    My aunt makes these. When I was pregnant, this was all that I craved. I ate almost all of them by myself. They're one of my favorites.

    I'm in a fishcake mood now! With the amount of essential herbs in that recipe that has to be one of the healthiest fried foods, I know they already have it for taste.

    I already know that these fish cakes are delicious, because you made them. Everything Paulette is the Queen of cooking in her kitchen and in my kitchen.     I truly love your Channel and as a true bajan I love how you represent and let others know the Bajan way of cooking.     You made it just like my mother used to. Like you said the potato is optional.
    In our household we loved adding more fresh peppers just for that extra kick!!
    There were never enough fishcakes in our home.

    Tried this recipe today, first time ever I attempted making fish cakes. Well, the fsh cakes were delicious. Also managed give away some batter to a friend...she was eating the fish cakes straight out of the pan. So I will be making another batch very soon.     Looks delicious!! I grew up eating Bajan cod fish fritters because my friend's mom use to make them for the holidays or special events and they were so yummy. I always begged her for the recipe but she never shared so I recreated my own just from memory and taste.

    You guys who does Bajan cooking or not from Barbados or you guys like Bim to long. There is no paprika, parsley and those other spices in fish cakes. What part of Barbados you guys from, my goodness!

    When I was in grade school a classmate of mine's mother used sweet potato in hers. I can't remember what island Doreen's parents were from but they were different from my Mother's fishcakes (my Mom was from Jamaica). Both were very delicious!!!!!

      Hi Maureen, yes it suppose to look dry, some may look more dry than others. I just heard back from my Dad, he said certain places sell it; even Sainsbury has it, and he ask you to check the World Food Section in the supermarkets. If that fails get a piece of cod, strip it up, soak or boil it in some salty water then prepare it and you are good to go. I hope I have helped you and thanks again for supporting.

    How much baking powder to use if I’m not using self rising flour

    Yes I am bajan and some do but I don’t know it’s necessary when you already have the flour that is to my mind enough to bind the mixture, but I don’t profess to be an expert.

    How do you know when they are done? So many times mine are nice and golden on the outside but raw on the inside. what Am I doing wrong?

      Hello Paula, It might be possible that your heat is a bit too high, if that is the case then yes, they are going to brown quick and not cooked in the inside; yeah you kinda have to know when they are cooked; they really should not take anymore than 4-5 minutes.     What is adobo?

      Adobo is a all purpose seasoning, I usually use that in place of salt when seasoning meats. Not sure what area you are from but you would find it in the Spanish isle with seasonings. And of course it is optional. Thanks so much for watching.

    This is as close to my Bajan grandma’s recipe as I’ve ever found (she passed before giving us the recipe). She didn’t add cloves though. It is an obvious flavor or does it just enhance the other ingredients?

      Hello Gloria and welcome!! I happen to be on the computer doing a little catchup because we lost power and internet for a coupe days due to the storm. I am so happy it is close to your grandma's that means that I am doing something right, lol. The good thing about recipes is that you can always tweak to your likings, I only started adding the clove recently because I had them from someone that used the clove and I really like the added flavor.
