    BAJAN COU-COU AND STEAM FLYING FISH
    COU-COU
    4 CUPS WATER
    1 TBSPN SALT ( TO TASTE )
    2 CUPS CORN MEAL
    10-12 OKRAS
    GRAVY
    FLYING FISH ( PREP, SEASONED W/GREEN SEASONING AND SET ASIDE IN REFRIGERATOR )
    1 1/2 CUPS WATER
    12 CHERRY TOMATOES
    1 LARGE SWEET YELLO ONION
    1/4 OR 1/2 RED BELL PEPPER ( DICED )
    1/4 OR 1/2 GREEN BELL PEPPER ( DICED )
    1 TBSPN GREEN SEASONING MIX
    1/4 CUP OLIVE OIL
    1 1/2 TBSPNS KETCHUP
    1/4 CUP HOT PEPPER SAUCE (BAJAN)
    2 TBSPNS SALTED BUTTER
    1/2 TBSPN FRESHLY GROUND BLACK PEPPER
    1/2 TBSPN GARLIC POWDER
    1/2 TBSPN ADOBO
    1/4 TSPN PAPRIKA
    2-3 OR SPRIGS OF FRESH THYME
    SIDE
    W/SWEET POTATA
    (PREP AHEAD) (WASH WELL, PAT DRY W/PAPER TOWEL, WRAP IN ALUMINUM FOIL AND BAKE UNTIL SOFT)
    SIDE
    W/PICKLE CUCUMBER
    (PREP AHEAD AND SET ASIDE IN REFRIGERATOR) WASH, PEEL AND SLICE THINLY.
    JUICE OF 1/2 OF A LIME
    1/2 TSPN SALT (OR TO TASTE)
    DIRECTIONS FOR GRAVY
    PUT WATER IN A SAUCEPAN OVER MEDIUM/HIGH HEAT AND ADD ALL OF THE ABOVE INGREDIENTS (EXCEPT FOR THE FISH) BRING TO A BOIL THEN TURN HEAT TO MEDIUM AND REDUCED DOWN AND ALL VEGETABLES ARE COOKED.
    THEN ADD THE FLYING FISH AND CONTINUE TO COOK FOR ANOTHER 10 MINUTES AND TURN OFF THE HEAT, COVER AND SET ASIDE OR KEEP ON LOW FLAME TO STAY WARM.
    DIRECTIONS FOR COU-COU
    (COOKING PROCESS IS BETWEEN 35-40 MINUTES)
    IN A SEPARATE BOWL; ADD THE CORN MEAL AND JUST COVER WITH WATER AND MIX. SET ASIDE WHILE THE OKRAS ARE COOKING.
    IN A MEDIUM SIZE POT, BRING WATER TO A BOIL, ADD THE SALT AND OKRAS; COOK UNTIL TENDER BUT NOT TOO SOFT. REMOVE FROM POT AND PLACE IN A DISH AND SET ASIDE.
    IN A SEPARATE BOWL OR CUP, POUR MOST OF THE OKRA WATER FROM THE POT, LEAVING ABOUT 3/4 CUP. TAKE THE BOWL THAT WAS SET ASIDE WITH THE CORN MEAL AND POUR OFF THE EXCESS WATER FROM THE TOP THEN POUR THE WET CORN MEAL INTO THE POT AND STIR CONSTANTLY UNTIL ALMOST ALL THE WATER HAS DRIED OUT.
    REPEAT THE PROCESS SEVERAL TIMES BY ADDING ABOUT 1/2 CUP OF THE WATER, STIRRING CONSTANTLY UNTIL WATER IS DRIED OUT.
    AND UNTIL THE MEAL IS COMPLETELY COOKED. TURN OFF THE HEAT; GREASE A BOWL WITH A LITTLE BUTTER AND PUT SOME OF THE COU COU MIX AND STIR INTO A SMOOTH BALL; TURN OUT ONTO A SERVING PLATE AND SERVE.

    All my years on this earth i have never seen cou-cou without the orkas in it Lord Jesus something new i guess, anyway everything looks very good 👍

      I make cou cou without okra all the time. Okras are like snot to me. I put nothing of that consistency in my mouth. I just use the water and tastes so delicious. For family members that like them I set them aside and spoon them over their cou cou. 🤷🏻

    5:40 Thanks for the amazing recipe ♡
    9:00 Stir constantly until all of the water has evaporated
    9:28 Cook for at least 35 minutes.
    9:40 Cook at medium till all the water is cooked out then turn down to low
    10:00 Still until the water is gone, then turn the heat down a little lower and when it is dried out add more water. Keep repeating until you get to the texture you want.
    If you want to cook it softer just add more slush.

      @@carolebridgeman5005 Ohh I have no idea my dear, I have not had any in some time but you should definitely use pink salmon with your cou cou, that's what I use now and I do actually like it better with the salmon.

    Now i had to pass this one up, sooooo not a fan of cou-cou.. Yeah i know revoke my bajan passport ,citizenship and rights 🇧🇧🇧🇧 right. "a bajan dat doan like cou-cou our national dish 😂😂😂😂. I Love to see people cook it,nd eat it (and the sweat bust out😂😂😂😂, it looks sooooooo enjoyable but i can't do it... But i showed my hubby the video and he says to tell u "ort den, das a proper cou-cou,sweet potato✅pickled cucumber ✅😂😂😂😂😂😂😂😂😂😂😂😂😂😂. From watching my elders make it i've come to realized the different styles as far as the okra inside the meal .. Now the flying fish"pullin loud".. My alllllll time favorite fish i could eat flying fish EVERYDAY.. ALLLLLL DAY..Nice video Paulette.. Feeling proud..

    Paulette, it looks awesome. My Mom taught me to do the cornmeal the same way; it prevents the cornmeal from lumping. I never heard of a Cou Cou stick. I love the way you do your fish💯👍🏽. Thank you so much.

      Hi Lisa! Thank you so much; it is not hard at all; you just have to prep your stuff in the right order; that is the hardest part. Try to start with at least 2 cups of the meal and remember, you don't have to use all the okra water; just enough for the consistency you need and make sure it's cooked.     Ahhh, my parents used to call this the "Home Economics" method: adding cold water to the cornmeal first. We also chopped up the okra and put it in the Cou-Cou.

Hello Robert, some things still remain with us and yes I used to cut up the okras and put them in the corn meal also but now I am more innovative and prefer to see the okras on the side and you are still getting the water they are cooked in so I see that as a win, win.       Lol, not sure about the breadfruit cou cou, that would have to wait till I go to Barbados because the breadfruits we get up here are not very fit; it's hit and miss. But will definitely do the green bananas in the near future; thanks for the suggestions. Xo

    I am a lover coo coo and fish actally that what cook today .I grow up with have it on on fridays as welll souse and pudding saturday / mutton soup. I enjoyed as always TFS

    Looks good but I prefer my okras chopped up in the cornmeal and some extra whole okras on the side. Dont like steam flying fish prefer fried. 💕🇬🇧

    This dish is one of my favorite dish from the islands. It used to be cooked on Fridays in my parents home with cod fish . i still make it but cannot find flying fish so i use king or snapper but would love to find flying fish in Canada. Your dish looks awesome tks. Great presentation.

    Growing up with the beautiful mix of Panamanian and Bajan approach to cou cou made me really like this dish. I never liked okra but the cou cou & red snapper was life. 🥰

      GM Raggamuffin!! You dont need the flying fish; you can use the salmon in the can; I actually prefer the salmon, I think the flavor is so much better. My girlfriend went to Barbados and brought me back the fish and the cornmeal. So use the salmon until you can get the flying fish.Have a blessed week my friend. Xo
