  • Author Dennis Valcich runs through the key ingredients used in Croatian cooking and demonstrates a recipe from the Dalmatian coast - artichoke with potatoes and broad beans. Also from Dalmatia is Melbourne chef Ino Kuvacic who makes fish stew on polenta (brodet). Home cook Branka Roncevic makes cabbage rolls, while her son Frank continues the family tradition of a big Sunday cookout using a bell-shaped outdoor oven (called a peka).

    I used to have a croatian neighbour that lived nextdoor to the older lady down back and when she cooked the aromas were heavenly

    I'm a NZ born Croatian and when he mentioned broad beans I had flashbacks of my childhood. That was one vegetable that traumatized me for life! Ha ha

    Although, this kind of sarma preparation is not the traditional one. But as with anything in Croatia, random villages/towns all have their particular way of making certain traditional dishes. Sometimes even different families from the same village/town will make certain foods differently depending on their place of origin and their tradition.

      Artichoke has too much personality to put it that way you have to get used to it its very "herby"

      ahhahahahahahah they are Turkish if you really wanna hear the real truth. Croatia, Serbia, Bosnia,Hungary claim them as their own, but they are NOT. they are only influence left from Ottoman Empire. so stop spreading lies and be realistic

    I know...if you don’t have anything good to say don’t say it at all. So...I will only say this, every time I see some of the meats and seafoods people are eating, I can truly say this is a FALLEN WORLD!!! Pig appendix......to eat?????🤢🤢🤢🤮🤮🤮🤮

      You do realise these food traditions came from poverty, no part of the animal was thrown away, everything was eaten. For some even having meat regularly was a luxury.
      There was no supermarket to go buy soy veggie burgers.
      Besides, how is there a difference between eating animal flesh and eating its organs.
      I bet you're the type of person who doesn't physically touch meat when you cook it.
