When I or my family make these, the base is always ground pork with carrot, onion, mung bean noodle, black fungi and seasonings (my mom always adds taro). I have never seen a Lao egg roll with this type of filling but I am fascinated. Great option for vegetarian friends.

Dude….. I make egg rolls a lot and follow a lot of different Asian food channels…. THESE EGG ROLLS ARE THE FN BOMB!!! So flavorful. So delicious! I did. go to my favorite Thai channel and made a different chili dipping sauce, but these egg rolls are DELICIOUS!!!
I've been trying to figure out why some of my eggrolls get the black spots. Use ground pork too but no cabbage or potato. What else could be added to absorb moisture (so no more bulk is added to the mixture)? You offer really helpful ideas!!!
my mom and each of my aunts make their egg rolls different and swear theirs is better than everyone else's. they all live in America, but right now I live in Laos. eggrolls here are not very popular. fried spring rolls made from rice paper are very popular though. the egg rolls here don't really taste good. they don't know how to keep them crispy. i use a fan. thinking about making egg rolls to sell here. 🤔

Best is perception. If you use store meat, not best. If you overkill on black fungus, not best. If the eggrolls don't pop open, not best. If egg rolls turn out perfect like that, not best.

Very nicely done! As a Lao mom, I'm very proud! I've never seen potatoes used before, this blew my mind! My mom sometimes used taro root, though.
I never use potatoes I only use Taro or Jicama

Great tip with the air fryer step. I tried spraying oil on the egg rolls and they never turned golden in the air fryer. I will try dipping next time!
