Ingredients:
1 Cup Butter, Softened
1 Cup Sugar
1 Cup Creamy Peanut Butter
2 Tablespoons Vanilla Extract
2 Eggs
2 1/4 Cups All Purpose Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 1/2 Cups Rolled Oats
1 Cup Semi Sweet Chocolate Cookies
4 Cups Round Toasted Oat Cereal (Cheerios)
Directions:
1. In a large mixing bowl, add butter, sugar, peanut butter, vanilla, and eggs. Beat at medium speed with an electric mixer until smooth. In a separate bowl, whisk together the flour, baking soda, and salt. Mix flour mixture into butter mixture in two additions at low speed, just until combined. Fold in the oats, chocolate chips, and cereal until well combined.
2. Drop 1/2 cup portions of dough onto a parchment lined baking sheet, leaving about 4 inches of space between each drop. Flatten cookies to about 3/4 inch thickness and round the edges.
3. Bake in a preheated oven at 375F for 12 minutes or until cookies are lightly browned around the edges. Let stand in baking sheets 5 minutes, then remove to a wire rack and cool completely.
