- The Brooklyn-based Malai is focused on creating unique and delicious ice creams that draw from owner Pooja Bavishi's Indian heritage. Using spices like star anise, turmeric, and rose, Malai’s flavors carefully balance the subtle tastes of spices with just the right amount of sweetness that you'd expect from ice cream. The secret is in the eggless base used for all their flavors, which both adds an extra creaminess and is a nod to the massive Hindu population in India, who don’t consume eggs for religious reasons.

@0:15 Chicken Tikka is most definitely Indian. It's *_Chicken Tikka Masala_* that is popularly claimed to have originated in the UK. That said, these flavors sound awesome and Pooja seems very cool. Best Fork Yeah episode so far (to me). 👍

Malai's Brooklyn location is unfortunately closed. However, Malai frequently does other pop-ups around the city. Also, their ice creams can be ordered online at their store, www.malai.co, and found at NYC Whole Foods locations! Hope this helps.
