We've had a Greater Swiss Mountain Dog, then a Flat-Coated Retriever and now a Galgo Español and live in Switzerland. The cheese we buy is what you would call "organic" meaning bio-pure, no additives or preservatives, usually from the farmer in the area. But very little pieces. Emmentaler (what you in the US cal "Swiss cheese", Gruyerzer and sometimes a corner of Brie. Never more than 20gr or so. He almost never has diarrhea.
When we're underway however, we have a tube of liver pate, which has helped give him as dependable a recall as out Retriever. 90% of the time, when outside and we call, he gets a couple of licks on the tube.

@@drlindsaybutzer - BTW, I'm a retired behavioral consultant, specialised in canine fear and fear aggression. Jares our Galgo is, to put it mildly, "different" than any other breed of dog I've encountered. Not surprisingly, since they are runners, not fighters, so I never saw any in my practice. He forced me to ask myself some very tough questions, like ... why do we insist, that a dog learn the cue "sit". Such sight hounds simply do not sit on their own. And they only lay down when comfortable. So if the dog doesn't naturally sit and wouldn't normally do so, why do we insist? And as you can guess, I'm not one of those dominance freaks.... So, why? Usually to reduce the dog's ease of mobility when we want the dog to remain in one spot. But if the dog chooses to simply stand next to someone or behind someone .... ? Mission accomplished if and when the relationship between dog and hooman is a good one of trust, not fear based.

My Mom feeds her small dog cheddar cheese every day. She is overweight and has diarrhea from it. I suggested goat cheese instead. I heard that cats especially and dogs are lactose intolerant.
