I know everybody cooks different, y personally like my caldo all clean ,yo cuelo el caldo para que quede limpio ,like you could clean with a napkin all that black stuff that is the blood that sticks to the top of the pot to remove all that nasty stuff. It looks delicious don't get me wrong 🙏🏻
Been wanting to make a Mexican caldo. I'm puertorican, but love cooking different culture dishes, Mexican is one of our favorite food here en mi casa. What type of dry chile do u suggest that wouldn't be spicy or a very mild chile? We don't mind just a hint of spice 🙂 I would love to make that caldo. Thank you!
As a person that omits the chiles de arbol and the serranos from Claudia's recipes because I can't take the heat, I'd recommend going with New Mexico since they are the most mild.
