I’m in culinary school and chef always gives us what he expects by a certain time. I get it done but with zero time to spare and there’s only a few things to do. This is very helpful!! Thank you! This helps motivate me to push forward.
Yeah, like I have said in comments on other videos, I have been in the "business" for over 35 years. In that time I've done everything from family steak house to fine dining to catering events and everything else food service related. Justin's comment about doing the tasks that are more difficult or that I don't like to do, I do first. Additionally, I always try to do the things hate the most with extra care and effort to do a just a little bit better than last time. I can tell the caliber of a cook by their prep list skills and Justin you are the real deal. I'd gladly take a shift with you, any day of the week.
@@justinkhanna hey can I come work with you? I work with a bunch of idiots who have no clue what they are doing! And they won't listen to experience, or instructions. They all think that their 2 year culinary arts degree somehow equal 35 years as a line dog. And I am a monster on prep. And they won't work stations. 3 or 4 guys all trying to serve 1 ticket at a time...
Hey Justin, thanks for all your amazing content. I've worked in a lot of different industries but now find myself as a baker making croissants and patisserie. Your insight and tips helped me excel from my first day and climb to a senior role incredibly quickly. I really owe you so much more than just this comment! I followed you for years and only now are all the tips paying off in my new field.
Thanks Justin for sharing. I always write down prep lists on paper. Your right to start projects that take the longest & are a priority first. So many times I used to fail at my prep list due to not prioritizing. It’s great that there’s an app for prep lists. I’m going to give this app a try & share with my Chef
Newer cook here looking to make things a little more efficient in my kitchen, this helps a lot even when it comes to cooking food in service. The number system especially.
I just found your channel today and I gotta say it's awesome! There are plenty of videos on youtube about cooking but I haven't really seen any that go into the prep side of working in a kitchen and as a linecook it's really cool to hear from someone with more experience in higher end kitchens about how they do things.
Thank you for your video. I cook in a nursing home and will try to incorporate some of these ideas in my work. I lack proper time management and sometimes can't get things done on time.
The most productive thing I ever learned was walk the mile to work and back . I would write my list on my way to work smoke a joint drink a red bull and go to work pumped up .
Thank you Chef for the incredible info about making a prep list. I’m a Pastry Chef De Partie and I’m always looking for a way to improve the kitchen and constantly become better starting with the smallest of details. Thank you once again.
Just had that same kind of service at a pop up! This video, as with all of you videos, is super helpful! Love the care you take with describing things that people would gloss over. The devil’s in the details!
I like to keep a pre-made prep list for my entire station. Every time I come back after a day or two off I can quickly check what is still there an what has to be done before service starts. The idea of having everything digitized is pretty cool but opening the app all the time might slow me down or do you use it just for an overview?
trello question... if we have 15+ catering gigs per week, do you recommend creating a 'list' for each gig and a 'card' on that board for each team? What do you do with the 'list' after the gig?
We've moved to AirTable since then and it's been a game changer to grapple with additional complexity. If I was still in Trello, yes, I'd list each gig, or maybe find a way to do create templates that you can start new events with. Happy to talk this through in a coaching call if you want one-on-one time! geni.us/coach
Thanks for the video Justin. I would like to attend one of your events, what's your schedule? I am from Gig Harbor so it would be no prob to hop the ferry!!! Awesome work!!
Ya'll! Subscribe to this guy! Dude, Justin, you've got amazing content. It helps give people tips on how to be more efficient and more prepared in the kitchen even if we have our own way of doing things already. And I do agree, get the hard items out of the way first or whichever could be done in the background while you do other things. Love your chef knife kit segments :D
Thanks for the Trello tip! As you know, a new pop-up can be daunting. I hope to streamline my next event, and you have been super helpful! I really enjoy your videos. Keep fighting the good fight! Thanks again. -Cody
Hi! What was the name of the app you mentioned in this video. I've been Chef de Partie for a few weeks and I have multiple venues to create production list for. I like to staying ahead. I think This could help me.
