Smash burger enthusiast here...been doing smash burgers for a while now and am excited to do some on a charcoal grill. Patty paper is a great idea! I prefer to smash my burgers directly on the heat source. Waiting for my grill to arrive and smash some burgers using my cast griddle! I Iike my burgers 3.5 ounces and a little thicker AFTER the smash. Thanks for the vid and the inspiration. Can't wait to check out some of your other videos. Outdoor cooking is the way to go!
I also make grilled smash burgers. Freeze the patties for 30-60 mins before grilling, to the point where you can hold them with out the patty folding over. Freezing lets you grill the burger longer, builds the char and with out over cooking. I grill one side then flip over for 15 secs just to brown the other side. Comes out juicy and charred.
How about a cast iron on the grill, we love grilled potatoes this way with some smoke chips.I found it challenging to presmash and turn the Burgers on the grill, one actually fell through but i retreived it.😊
You’re right it is a challenge to presmash the burgers because they tend to get warm before they go in the grill and fall apart. I should’ve explained that in the video. If they’re really cold before you put them on, they turn out more consistent. 👍
I tried this for my first time grilling tonight, and I guess my grill wasn't hot enough because the burgers started melting through the cracks lmao. How do I make sure it's hot enough? more coals? I did a pyramid formation on one side but maybe not enough?
Sorry to hear that. I would make sure the meat is as cold as possible before you put it on the grill just to make it easier to remove the patty wax. I would still make sure the grill is nice and hot. Maybe don’t smash them super paper thin. Also, when flipping, make sure the spatula is going with the grates. And remember it cooks super super fast. Good luck.

I like the idea of the tortilla press to make the patties uniform thickness and to the thickness you like. I bought similar paper but chose parchment as opposed to waxed. Your choice. 1,000 5.5" sq. sheets should last me the rest of my days. I'm a 2 1/2 ounce 80/20 patty guy and serve doubles with a homemade Jamaican BBQ sauce instead of ketchup. You make your burger, I'll make mine. I'll try this on my Weber but will use my cast iron burger press to press my burgers before I invest in a tortilla press, just to see how much I enjoy them grilled as opposed to using a griddle or flat top. All the meticulous prep,including gloves,wax paper,press,chimney,yet the grill is crusty top and bottom.Gotta keep it scrubbed,both sides, and hit with olive oil to avoid stick,and it makes nice grill marks.I think in the summer bacteria builds if you don't clean it before a cook,and everyone gets Shit Your Pants Burgers lol.
I scrubbed the top grates every single time I use a grill. In my opinion, you never need oil. Nothing ever sticks if it’s hot enough. if it doesn’t look good to, you, don’t cook it. ✌️
You do realize you keep flavor in a grill right? Do you seriously wash down your whole grill before each use? You've probably ate more chemicals grilling to harm you then the miniscule amount of bacteria that's leftover on mine😂
I forgot to mention in the video, if the patty isn’t pretty cold right when you’re putting it on the grates, it’s hard to get the patty wax off. Other than that, you should be good
