    I work at a steakhouse here in LA and one of my favorite things is to filet a Dover Sole with a spoon and fork. At the restaurant we wheel it to your table on a gueridon and give you a little show while you eat. When eating you don't just want to think of it as fuel, it can be something special.
    This fish with the beurre blanc sauce is wonderful. The acid from the wine and lemon help cut the richness of the butter and fish. If you don't have the time or don't feel to confident with the sauce you can always make a quick brown butter in the pan. This is a must try!!

    Sauce:
    1 cup white wine
    1/4 tsp black peppercorns
    1 shallot, minced
    1 thyme sprig
    2 lemon, juiced
    4 ounce butter, cold, diced

      I am sure you can find some. The dover sole I used was flash frozen. So I thawed it in the fridge over night.

    No chervil in your fines herbes? Do you just find it unnecessary or too hard to find?
    Dish looks classic and wonderful, btw! Keep it up! Would love to visit your steakhouse when I’m in your part of the country.

    There's something about watching you pull all the bones out of that fish that made it look so good wish I could've tasted it!

    Take the bone out before you cook it would be my advice.
    Other than that these videos are really nice.

      Nonsense - the fish would disintegrate before you even got it in the pan - the bones are what hold the fish together in the first place !!! And, on what do you base your 'advice' - please explain in detail - tank you !
