- This week, we’re introducing an alternative pouring structure for those of you that enjoy brewing filter coffee with our April Brewer.
Whilst we're commonly opting for a recipe consisting of 12g of coffee and 200g of water in two pours, we thought many of you may be interested in extending the size and length of your brews sometimes. Patrick, is it possible to film these brewing video from first person perspective? We can't really see the inside of the brewer this way or the scale number from this angle

Currently brewing 23:300, 1:13ish ratio.
3 pours of 100 (50 circle and 50 center), same timing as yours. Just that because I live at 3600+ masl, water boils at approximately 88. So I grind at 22-23 clicks on Comandante and do the pours slower. Making sure to saturate all of the coffee bed.
Got sweet yet with rich acid notes. The coffees are quite complex. Really nice the no-bitternes.

Is there any way to by the April cups separate form the kit ? My cat decided to break mine 😂
This is by far the best recipe I’ve had on the April Brewer. I got a really clean cup while using my Fellow Ode 2 on the number 6 setting. I would definitely say that with this coffee 6-8g per second of a pour seemed to do the trick for me. I also think making the initial circle pours cover as much coffee to help with clarity.
@H C I think it’s bean specific for sure. That coffee was about 3 weeks old and was a lighter coffee roaster on a Loring.

Actually I was thinking of the same things you said, those last videos. I have now like 3 variations of pouring structures. Starting from your recommendations and thinking. Now I've reached a pouring structure that I shall be brave enough to share it with you. I want to share it with Mr. Patrik_ personally. I live in Egypt (far away) and I am not a Professional barista, but I hope I can add value. If you are interested, choose a way of communication of your preference. Thank you! I thought with different pouring you ment swirling stirring wdt and the whole shabang @lancehedrick style 😅
I have had the best results with the April using a bloom of 2x the coffee weight in water. After that just do equal volume pours up to your desired volume.
I have also had some interesting results with bypass brewing for larger volumes of coffee (brew 500ml with 350ml and 150ml bypass), and with brewing over an ice-cube to try and lock in some aromatics.
I do wish you would go into a little bit about how the pouring affects the cup in the end result. What about the taste changes based on how you’re pouring?
Approximate C40 grind size (clicks) ?
I found for most brews with the traditional april pouring structure I was at 23-24 clicks on a commandante mk4 (even though Patrick recommended 26 clicks at an earlier video). But the mk4 seems to produce less fines needing to grind finer overall than with an mk3.
Given that this recipe asks for more ground coffee and uses ethiopian coffee which often produces many fines I would try something around 30 clicks on an MK3 and 27 clicks on an MK4 and then dial in from there.
Curious to see what Patrick would say though!

@@simonlee4781I swear something is wrong with my c40 because I get to 2:00 minutes around 30 clicks
I tried this recipe this morning but doubling everything (32g - 480g - 3x 160g pours), it was good but tasted a little bit overexacted. Maybe for a larger dose I should stick to 30g ? I usually do 30 - 500
The initial pour of 160g is too much. And we would recommend staying at 20/300 as the largest brew.

What is the recommended grind coarseness?
We always recommend to be around 650 microns. What do you usually use?

@@genzananiri9831 we are not sure what that would be in terms of Microns. But on a C40 it would be around 27 clicks.
