    Growing up in Colombia, drinking coffee out of dirty cloth filters at my grandma's I never thought there was more to coffee than that. Then I started learning about coffee throughout the past years and I never thought I would come back to cloth filters. Now I have to visit my grandma and try this with her. Thanks for this video James.

      Viva Colombia! Indeed, I grew up drinking cafe con leche with my grandma, which was essentially, instant coffee and steamed milk. I miss and love my abuelita, but learning about coffee as I have, makes me only nostalgic about my grandma, not the cafe. 🤪

      Aquí en Costa Rica vivimos la misma historia.
      La mayoría de casas que no utilizan coffemakers utilizan este tipo de bolsas.
      En algunas casas he visto real socks como clothing filters. 😂

      Often wonder if people like this has actually tried good coffee. Or the one time they did try coffee it was from the truck stop that was 8 hours old and I'm about room temperature. Then decides for the rest of their lives they don't like coffee

    When I was little and I stayed at my grandmother’s house, every morning she would wake up and brew coffee with the sock filter. To keep it from smelling bad what she did was to put it inside the fridge. For my family, she made the best Puerto Rican coffee ever. I didn’t drink coffee back then though but still it was a nice family tradition every time everyone showed up at her place to brew coffee that way. Good memories 🥰😍 This video made me think about her . Miss her so much

      Agreed. I went from drinking coffee 3 or 4 times a year (only ever with cream and sugar) to brewing some of the best coffee I've ever tasted - drinking black now, several cups per day. I never knew this was a possibility with coffee. I thought it tasted like bitter dirt, and the only reason folks drank it was for caffeine. I don't care about the caffeine - the ritual and the amazing flavors, the drive to improve extraction for an optimal experience, has been an amazing reward. Most of that journey has been possible because of the Hoff.

    My mom grew up in the Sierra Madre range and would make coffee using this method. Along with roasting the beans over a large clay pan and hand grinding them on a metate. Sometimes they would grind the coffee extremely fine with a sugar cane loaf for a kind of "instant" coffee. I shared this video with her and her eyes sparkled with nostalgia. Thank you James!

      if you like floral-like coffee, then definitely you have to try West Java coffee. We have Java Halu, Gunung Puntang, etc. They are Arabica single origin coffee. I have them around me since this is close to where I live. I like less-floral, but can't complain with the coffee that we have around here. It's just heaven (on earth).

    In South East Asia, especially in coffeshops in Malaysia and Singapore, drinking sock coffee is standard fare. My introduction to drinking coffee as a child was through sock coffee. The sock that is used is elongated and large volumes of coffee can be brewed quickly. I remember brewing coffee this way for many years from age 12 onwards. I mostly drink coffee from the V60 and my all in one these days due to the convenience, but I might just go out and get a traditional "Nan Yang" style coffee sock to try it out again.

    I'm from Costa Rica and cloth filter is the way how older generations used to brew our coffee. Yes, some are nasty but as James put it, if you're willing to invest time in maintaining that cloth properly then your whole coffee experience will elevate. I love having a prime coffee brewed at home in my 'sock", so many child memories... amazing, I love it!

    I’m Puerto Rican. The “colador” is how I grew up drinking coffee and my family still does it.
    Edit: Idea! Do a series on people in diff countries making coffee like PR/DR/Cuba, Latin America, Diff places in Africa, Diff places in Middle East, Diff places in Asia, Diff Places un Europe. I know it’s difficult right now given the Global Pandemic but maybe you can collaborate and also make where you are to test or something. Idk. If you run with this idea I get coffee from each country k? Thxbye 😅

      I learned to use these from my Puerto Rican friends here in NYC years ago, it's great. I call it the old sock, I have two of them hanging in my kitchen.

      From my travels in Peru and Bolivia, even in coffee growing regions, people there use one of two ways of making coffee. One is instant. Nescafe is everywhere, and probably what you're more likely to find in a family kitchen. The other, and what you're more likely to find in a restaurant, is a pitcher of coffee extract that you pour into a cup of hot water. Espresso machines are appearing in some big cities. However, they export all of their good coffee beans, and the one high-quality café I found in Peru charged American prices for drinks because they had to pay export rates to buy high-quality Peruvian beans domestically.

    You should try a hemp filter! Hemp has great antibacterial properties and mildew has never been an issue for me.

      I have the same hario sock, but obviously i was oblivious to the need to keep it wet and frozen 😢 and ruin it without realising it.
      If you visit singapore @james hoffman i would to intro the different ways socks are used by the malays, indians and chinese, for tea and coffee

      @@BenLovee I bought recently the v60 and the classic Melitta. I brewed light and dark roast with both filters and they came out excellent. I do encourage people to try the hemp version even if they have all the different types of brewing methods.

    Here in the southeastern Brazil, I believe most households used cloth filter - usually the "long sock" ones. However, in the last 20 or so years many people have turned to paper filters (Melitta is probably the most known brand here) or sintetic fabrics (like poliester) due to a considerable economic growth that elevated many families to the middle classe status - and consumer demands. I myself just recently started using cloth filter (the Hario DPW was a gift from my wife) and indeed, when done right, it is wonderful.

    I live in Indonesia where it can be difficult to find paper filters. Also I find that paper filters can impart a dry flavor to the coffee. I’ve started using homemade linen filters. I simply fold a flat piece of linen into into a cone like a Chemex filter. Then insert it into a filter cone.
    I enjoy the coffee and especially the low in environmental impact.

      I went to a french press because paper filters strip out all the oils, which has the flavor.
      I'll try the cloth and see how I like it.

      Which part of Indonesia? I live in Bali, Indonesia, and paper filters not so rare. I can easily go to groceries and buy some paper filters.

    Fun story. I was camping and we forgot filters. So, someone cut a peice of their t shirt off to use as a filter and we were all impressed at the coffee. Always wondered why they didn't sell cotton filters.

    this brought me back to the centrifugue video. we know that centrifuging coffee can separate the oils from the liquid, would it be possible to centrifugue samples of coffee brewed through filters of different materials to see which ones let through the most oils and how much that impacts taste?

    I've been a barista and specialty coffee roaster for eight years, and I agree with you. For some reason with the filtration methods involved, cloth filters are the best to let oils through and keep sediment particles in for a bolder, silk bod full of flavor. I use a cloth filter when brewing cold press at home and a quart gallon mason jar for cold press to share in hot summer months. Better results than any other method. Also for pour overs, as opposed to v60s. But you are right with the up keep. Maybe it's unconventional but to quickly dry the filter, after rinsing, I boil my large, cloth cold press filter then, wring it out, then hit it with a small air dryer to rapidly dry it so that it doesnt grow mold or mildew, and sanitizes it at the same time. So I don't keep it wet, but it drys it in about 3:30-4min. Then I have cold press for 3 days. I never have a problem with scent, growth, or color. But you're right depends on how much work you want to put in.

    My grandma exclusively used a cloth filter and she kept it well cleaned, whenever i would visit she made what felt like the best coffee i've ever had and i have a lot of nostalgic love for these filters. I might consider getting one for myself :)

    This is my breaking point to comment, considering this cloth filter is very close to my culture
    I am Brazilian, 22 yo and I think you prob have an idea of how HUGE coffee culture is here and maybe you know how it basically shaped our country’s economy, specially my state’s history overall
    So basically I wanna say thank you, because due to your videos, I finally found a way to understand and connect to coffee because of your content, in a way that I can feel proud of it. It was a very bad economic system here, ngl, but it made my family and many other come together, my town was created based on it and whether the history is beautiful or not, it made us who we are today as Brazilians… I always liked coffee and I always wanted to understand why so many people like it. I drink it ever since I was a kid, but I never really appreciated it and now i do! Love the work, thank you for everything 💛

    Thanks for the video. It brought back a lot of memories, my grandfather used the colador to make coffee every day. This was the only way we had coffee as toddlers, Poppy would put coffee on our bottles or sippy cups with what I remember to be about two tablespoons of sugar. He’d practically dare our parents to take it away, they’d try to explain that it could stunt our growth. This Puerto Rican man would stand tall at 5’ 3” and remind them that his sons are 6’ 3” and 6’ 5” and his daughters are both 5’ 9” and he raised them both on his coffee. ☕️

    When I was in Costa Rica a few months ago, I was very excited to explore all the coffee. What I didn't know was going to excite me was experiencing a Chorreador for the first time. I remember sitting in a Cafe and several people were using the Chorreador. The server would brew the coffee in the Chorreador right in front of you. That filter improves the texture and its richness. A cloth filter does an amazing job.

    i'm singaporean, we traditionally use an actual cotton sock for our coffee, used to darker, more chocolate-y brews, never crossed my mind to use lighter coffees

    I've just got my cloth filter today and gave it a try immediately. Now I can understand that silky texture James talked about. It brews faster but doesn't compensate the extraction. I'm in heaven now.

    For de-staining a cloth filter I've found that OxyClean works well and has the benefit that it rinses out easily and doesn't leave behind a nasty taste. I've used it on the cloth filters for my coffee syphon set-ups. Just dump some OxyClean in a glass, add hot water and the filter and swirl a bit, leave overnight and rinse the next day.

      agreed. cafiza is overkill for cleaning cloth ... the phosphate is there to clean metal and there are smaller amounts of actually toxic chemicals that need careful rinsing
      oxyclean (or indeed supermarket brand sodium percarbonate, aka nappy soaker, which is the same thing and about 30% of carfiza) should do the job, and if you need to make it clean more viciously or kill germs harder, you can safely boost it with caustic soda (which is dangerous, but both chemicals are totally non-toxic in dilute form, cheap, and environmentally friendly)

      OxyClean is what I use to get coffee residue out of carafes / baskets, to clean sticky filter oil out of sponge air filters, to get anything wax-related out of just about anything... Most of those tasks could be accomplished just as well by washing soda (a component of OxyClean's action), but the extra peroxide can't hurt.

    My grandmother, who is Colombian, would just boil water on a pot, then throw the coffee grinds into it and turned off the heat (like she did with every single infusion). Then she would use the cloth filter (which here in Ecuador is called "chuspa") and just use it more like a percolator. I was too little to remember how the coffee tasted, but I do remember I loved to drink her coffee (I never liked cocoa as a child and only drank coffee).

    My favourite method!! I've been brewing my coffee like that for around 15 years.
    Always hated the amount of waste that paper filters produce. I even have a cloth filter on the coffee machine at work.

    I'm so happy cloth finally gets some recognition. I've been using the Nel for quite sometime and the crystal clarity of the brew mixed with amazing body is wonderful and actually quite strange by comparison to something like the chemex that has similar clarity, at the expense of a luscious mouthfeel. The Nel blends body and clarity perfectly imo

    The very famous chorreador. This video brought back all the memories from when I was around 10 years old and had to prepare coffee for me and my siblings. I remember hating how slow the water used to run down through the filter and of course I remember washing that thing. The cloth was the only method until the coffee makers arrived and we all became lazy. It remained very popular in the rural areas but nowadays even the fancy cafeterias are using it and young generations really love it

    My Grandma used the sock filter almost all the time, I was never aware of any funky flavor, this was the time when children would get a very mild coffee with milk (a latté we call it today) with cookies and we loved it. For me I have never tried doing it myself but thanks to your way of describing things I will probably give it a shot

    I'm not a connoisseur:
    At home: french press + grinder, my favourite.
    At work: coffe machine, usually repugnant...
    At office cafeteria: double espresso.
    At cottage: simple brewer w paper filters, second best.
    Occasionally: Nespresso capsules, or even freeze dried...
    Quality and taste varies about two orders of magnitude (x100), but I can live with that!

    After pretty long time of wondering how to make my french press coffee closer to a pour-over in terms of clarity but without losing any flavour complexity I watched this and ordered such filter immediately. It should arrive tomorrow, can't wait to brew some sock filtered coffee.

    The best cup of coffee I have ever consumed was in a roadside restaurant in Costa Rica and was brewed using the "sock method". Pure heaven and, obviously, very memorable!

    This was great. After struggling to find replacement paper filters for my Chemex, I recently switched to cloth. I also noticed more oil relative to the paper filters, which I enjoyed. Hearing about mildew and funk that might come up from not storing the filters properly is very helpful.

    I've been brewing with filter now for the last couple of weeks and I really love the mouth feel of cloth filtered coffee. I can actually see the difference as well, clearly more oils coming through which add to the experience.

    The Hario Woodneck has been my favorite piece of coffee gear for years. Glad to see it getting some much deserved attention.
    I boil my filters in an oxyclean solution once a week and I'm good to go.

    Hi James. I’m really excited to hear you’re also a fan of cloth filters. Cleaning them is definitely a pain but I started using them because, in theory, there’s less waste than paper (although you end up using a lot of water). The weirdest thing was how difficult it was to buy a cloth filter in the uk for a V60. Most of the ones I found are made overseas. In the end I bought a set from someone on Etsy who makes them. They’ve lasted and I really like them. This was 2 or 3 years ago so maybe things are different now.

    Just got a cloth filter for my Aeropress and I have to say that following the exact same recipe it has made a much bigger difference than I anticipated. Definitely going to keep using it!

    As a Puerto Rican/ Dominican my grandma only brews coffee this way. The texture is just something so lovely that I only have this black with a little sugar. I have some kind of special love for this method of brewing. :)

      The same here, I'm from PR and abuela brewed coffee this way. Only difference is that she boiled the water with the coffee grounds in it and then strained.

    Hello James! I've been following you for a while, and you ' re making me feel more in love with coffee. I come from a family that traditionally drinks coffee at mornings and afternoons, like the tea time in the UK (I am from mexico, btw). My grandma used to brew cloth coffee every single morning, and her children and grandchildren we all learned this method. Here in Mexico the cloth is used to brew "cafe de olla", also, which it has cane sugar, cinnamon, pepper, orange peel and anis. It's so aromatic! Thank you for sharing your passion and your knowledge with us.

    Fabulous video! I loved it all and I am planning on trying the cloth filters out. I remember as a child seeing the coffee brew on large cloth socks with plenty of strong coffee. I remember the smells and aroma. It’s coming back to me those memories that I had forgotten. I want to now relive that experience again. The aroma is in my deep memories. James Hoffmann has brought those memories back to me. I now want to live my childhood memories again. The aroma of wonderful coffee! Thank you!
