Tri-Tip on the Frontgate Gas Grill! Reversed Seared! Pit Patriot!

- Our local Weis Market now carries Tri-Tip! We reversed seared this nice Tri-Tip on Jack’s Frontgate gas grill. We used All American BBQ Seasoning from Pit Patriot! Check out our affilliates! linktr.ee/beer...
• Started with just under a 3 lb Tri-Tip from Weis Markets.
• Salt brined the Tri-Tip 24 hours in advance.
• 2 hours before the cook I seasoned it with Pit Patriot All American BBQ Seasoning.
• Had the Frontgage gas grill set up for indirect with the 2 outside burners on Medium. Temp was a little high at 350 so we turned down to low and it held around 300.
• Placed the Tri Tip on the center indirect until it reached about 80 degrees and then flipped it to promote even cooking. Once it reached 110 we pulled it and turned all the burners to high including the center burner.
• Seared the Tri Tip on both sides for a total of 4 minutes, flipping every minute. Then pulled it to let it rest.
Summary: This was a perfect rare to low end medium rare. The Pit Patriot Seasoning is outstanding! I was impressed by the Tri Tip, it was not marked for the grade, but I would say it was in line with Choice. This was a great cook and rub just helped this get even better!

Tried this "Reverse Seared" method tonight, brought the second side up to 120-125 for medium rare, then one minute sear on each side, then rest. It was incredible!!! Thanks so much for sharing this method.

Used this method this evening with a 1.48 lbs tri-tip. Used the Meater thermometer for the first time, worked like a champ. My grill is not great so I could only manage to keep the ambient temperature between 330 to 340. Prob a little too warm. That said, very happy with the results. Thanks for the video!

Thanks! Yes, I seared it 1 minute a side two times for a total of 4 minutes. I watched the video again and I did not say that, but it is my normal process for searing. Thanks for asking, I didn’t realize that I didn’t explain that. Cheers!

How long did it take once you put it on your grill?
Hey Gary, Sorry for the delay, it has been a hectic summer. Depending on the size and temp of course it is usually about 1 hour to 1.25 hours to get the internal for how we like it before searing. Cheers!

Hello! I would like to try making this for the first time…. A total newbie here…. When you said salt brined the tri tip, what exactly was that? I’ve only ever brined a turkey, so I’m not sure if it’s the same? 😅
Thanks for watching! Some people don’t like when this method is called salt brine because as you mention, doing a Turkey is brining in a salt/water mixture. This process is sprinkling Kosher salt on the steak 24 hours in advance, you can do this as little as 4 hours, but overnight is good for thicker steaks. You don’t want to use table salt and use kosher. They recommend 1 teaspoon per pound, I do not use that much. I just sprinkle it on until it looks like enough. Better to start with less so you don’t over salt and you will learn how much you like on it. This is especially important if you plan to add more seasoning, because almost all of them contain salt. I typically don’t add more seasoning besides some pepper and garlic, but we were working with this company at the time of the video. Hope that helps! Enjoy your cooking. I did mention that it rose to 120F before we started to sear, but I didn’t do a good job on showing me probe this to verify the temps. This finished around 128 and was between rare and medium rare. Cheers!

How long did each step take?
From the time we put it on the grill, it usually takes about 1 hour to an hour 15 minutes. My guess step one going to 80 degrees is usually about 30 to 45 minutes, next step to 110 about 20 minutes to a 1/2 hour. We removed and turned the grill all of the way up, seared 1 minute a side twice for each side, so 4 minutes total. Let rest at least 15 minutes! Hope that helps! Cheers!
At 300 temp... how long did it take to get to 110 degrees?
I looked back at my temp graph and it looks like it took about 55 minutes for this one. Always a tough question to answer because of the variables. The grill was running a little hot in the beginning as well. Hope that helps! Thanks for watching! Cheers!

How can you tell the temp of the meat?
The probe we were using is called the Meater+. The front of the probe does the meat temperature and the back does the ambient/grill temp. It connects to your phone. It is a great product and the main reason I got that was for some rotisserie cooks. Thanks for watching! Cheers!

That looks like raw meat
It was on the low end of medium rare to rare, but you have to cook it how you like it and we like it on the low end of medium rare. It also is nice when you heat up the leftovers! Cheers!
