It is excellent - use coconut oil, 2 Teaspoons in the rice - keep it shelly!!! I love love raw vegetable and will use the sweet papers - green, red - all the colours as decorated thing - everything on the plate must be good - 8 ounces of lime or lemon juice with crush ice!!!!!!! Nice!

Funny that the Island Spice Turmeric is "Turmeric" on the front, but "Tumeric" (missing the first 'R' before the "M') on the ingredients list on the back. Beautiful colours and plating! With the "burning the curry powder" technique, do any Jamaican recipes call for the curry powder to be mixed with a little water first to make a paste before frying it off?

Not sure what plant that is though the flower more similar to thai basil than sweet basil especially the stem and flower, but never seen basil with a serrated outer edge that is yellow and it almost waxy.

I would like to thank you for that tip as I haven't seen it any where else and I'm sure suet is the key to an authentic flavor.
We had a huge arguement because of the way we use " curry " name.. In Asia mainly south asia we never call our curries like curry chicken curry potato or curry fish like that.. We always call it as Chicken curry , Dhal curry , Fish curry etc. I was so surprised to hear that cause Jamaican call it the opposite way Lol .

Im living in China and i bought all spice online ..they are probably imported or just chinese product ..i ordered them to make jerk chicken after watching your video . But the pimentoes are very hard and dry.. They are not even blending.. I wonder they are a different type or if thats how its
I know turmeric is traditional in curry but is it just there for color and can the color come from anywhere else? I would make more curry but my wife is allergic to turmeric.
Turmeric does have a distinct flavour but you can skip it no problem, annatto has also been traditional in Jamaica curry as well so you could try that but do you really need the colour?
I'm intolerant to coconut in larger quantities, it gave me a headache and made me extremely nauseous... Doing recipe testing meant I was eating coconut for days (sweet potato pudding with coconut milk and grated, toasted coconut, coconut curry chicken)

Basmati cooking ratio is generally 2-1. Two cups of water for 1 cup of rice. Always cooked right.

That's the way to cook curry.To burn the curry some people throw the raw curry on the Chicken when Seasoning the chicken
