Thank you for the recipe :) I will make it without the butter as I am looking for potato alternatives because potatos are inflammatory for people with Rheumatoid Arthritis. Cassava is an anti-inflammatory vegetable :D Yucca has that help soothe pain. Some research suggests that those at high risk for arthritis could potentially prevent its onset by taking yucca. Yucca also contains powerful antioxidants and saponins. These substances can decrease arthritis symptoms.

Hey buddy when you freeze produce the crystal lattice or structure is affected allowing for steam to better penetrate and thereby boil more efficiently and by extension faster. Big up from Tobago

Hi Chris, I love your recipes so much. I thought sautéing the thyme and other ingredients in the butter to release more flavors and then pouring them over the hot cassava. Thanks you are cool

Love buttered cassava but to a hot pot, I add the butter then the herbs and heat for 2-3 minutes and pour it over the cassava.

At 2:35 you made a point of mentioning that fresh cassava has trouble boiling. I cooked my first cassava a few days ago. It came in a vegetable csa share and I read to be sure I peeled it well. It said to halve lengthwise 2x and take out the center because it is very fibrous. Stringy. I did so and diced it relatively small, as I had never had it before, I read it was a great mashed potato substitute. While I loved the taste I will admit...I simmered it a long time and it was hard to mash. They did not get tender as I would expect. Added a bit of butter, cream, salt and pepper. I simmered it with sliced garlic, as I do potatoes, and mashed it in. Is this why frozen is better? I am a newbie but want to make it right.
