Back in 1999 the celebrity chef behind one of Dublin's most popular steakhouses felt he was missing out on life and returned his Michelin stars. He discusses the move from chef to restaurateur with The Saturday Night Show's Brendan O'Connor.

I wouldn't consider it an early retirement. Some people who retire at 65 have worked fewer total hours than Marco did by the time he was 33.

So it's more for his own sense of integrity rather than for money. That's fascinating and also quite admirable to be able to decide to live on your own terms like that. How he can take money out of the picture... Respect!

what a great chef! Michelin stars are just a title, he is still the best chef whether he keeps those or give them up.
