Great tip on what I call a "shoe leather" cut. We had this about once a month when I was a kid. My old Mom would even make it with loose ground beef(sometimes made into meatballs), in a pinch, and it was still good. This is a good version, thanks Rik.

Darn it Rik I just got back from Tesco’s with some lovely tender beef for a steak and kidney pie and started to prepare it! Then saw this, I would have made this one as stroganoff is one of my favourite meals- next week that will be on menu.

It's just me now but when I cooked for the family stroganoff was in the rotation monthly. I learned with London broil or top round to slice it thin on a slant( across the bias)across the grain . This shortens the fibers and it's instantly tender. You can even grill it and cut it this way and it is tender.🎉

Many years ago maybe a year after the wall came down. I did the trans-Siberian train journey. Stroganoff was on the menu and it consisted of cold spaghetti with three bits of gristle in gravy and a tepid raw egg on top.I was in my 20's then and now I am late 50's! But the trains had to be lifted to change gauge between Europe and China. Passing the latter and taking into account the language barrier I just pointed and gestured '1' upon delivery a Chinese couple from America told me that I had ordered dog. I spent the next 20 years of travel learning the basic language of each country I travelled through!

Can you do your version of sausage and onion cooked in milk. My mother used to make it when I was growing up. I believe the sausage replaced tripe. I would love to see your version of it.
Good one Rik, I have a big bottle of mushroom soy, wondered if you know if it would be too strong tasting to use to marinate beef. We get London broil pretty cheap, usually $5 a pound which today is reasonable for a boneless cut of beef.😊
