As an Italian American myself I appreciate Rik making the distinction between our cuisine and Italian cuisine. They're related but not the same, sort of like how British Indian food is related to but not the same as Indian food. This dish is a childhood favorite. Rik's recipe isn't quite the way my grandma made it but if I got this in a restaurant I'd be pleased with it.
I love your style Rik, no fuss and simple instructions and explanations. Down to earth and no nonsense. Plus always an eye on economy and no messing about. All flavour and goodness.
Chef, wishing you and your family a Happy New. I have learned a most valuable lesson from you. I believe the Number 1 most valuable tool in a kitchen is a SHARP knife. Don’t need exotic spices or expensive pans, don’t need five burner stove, don’t need beautiful serving dishes, don’t even need large prep space. But a sharp knife is a must. My mother’s knife barely had wood left on the handle. My father sharpened it with a wet stone and there was barely any blade left but it fit her hand and she diced, sliced and deboned everything with it. When I think of all the stuff I’ve bought over the years I’m embarrassed. That money could have been put to much better use. Just cook your family the meals that warm their souls, meals they constantly ask for with good, clean ingredients. Keep it slow and steady. HAPPY NEW YEAR🎉
I appreciate a good sharp knife too. I have a small paring knife that my father made for my mother. It fits my hand perfectly but the knife is curvy and irregular in shape but works perfectly. I have his old whetstone and honing steel. The whetstone is thinner in the middle due to all the sharpening that he did. I have yet to find another paring knife that is so comfortable.

What a delicious dish to see on your channel. Last summer my granddaughter and her new husband treated both families to dinner at a fancy restaurant in Kansas City. I ordered their chicken piccata. As a sort of southern person with only having had fried chicken or chicken and noodles, I ordered this just to surprise myself. It was one of the most delicious meals i had ever eaten. And here you have an easy recipe for me to make. And just as doon as I get my smell and taste back from having the flu, I'm treating my family to your recipe. You make things so easy. Nó the couple places I worked that had piccata on the menu...1 place we did grilled chicken, then we'd do the sauce like you did and pour it over...the other place, we'd make the sauce like you did, except we'd use roux instead of straight butter, that would go on the plate, we'd slice the chicken out and do a sort of poach on that, lay it in the sauce top with additional capers and sprig of parsley. I'll have to try this

This is a great dish(you slapped that chicken around like it did something to you lol). Italian American food is of course not genuine Italian. Those old folks had to adapt to the new country, and what was available and cheap...that doesn't mean it's not delicious. Good one Rik :)
