My dad's favorite dessert! I remember Mom making this for him, but she would bake two layers of her vanilla cake and put the custard between. Her ganache was near the same as this one. It was delicious! But this one looks great too! Thank you!
My complete cheat method is a yellow cake mix baked in a pie pan. Cut in half for two layers. Make instant vanilla pudding with a little less milk so it's a bit thicker. Thin out a can of chocolate fudge frosting to spread on top. It's assembled and served from the pie pan (hence the name). No, it's not as good as Rik's but it's quick and doable if that's all you have the bandwidth for.

Your sponge looked absolutely sublime 😍, moist, light & springy, with perfect texture.👌 One of my all time favourite sweet cakes is the humble custard slice, & your sandwich filling very much reminds me of that, topped with the chocolate ganache … sheer bliss!🥰😋 Would love to enjoy a slice of that with a nice cuppa ☕️ 🫖 . No Key Lime pie is something that was created in the Florida Keys, story goes after a hurricane the Keys were cut off for a time, and the only thing they had for dessert was Key limes(small pungent yellow fruit, now supposedly extinct, though Mexico grows a dark green version) and condensed milk, they combined the two, and poured it into a cooked pastry shell, left it a few hours and it set up so you could cut it. Today it is topped with whipped cream.Some are now made by also adding egg yolks, pinch of salt, and baking till set, if made that way it needs a low oven, and careful watching, as it can overcook, and curdle very easily.😊
That’s a good one Rik. That is the exact recipe for celebration cakes I made at the restaurants I worked in, and for chocolate I swopped out some of the flour for cocoa powder. I haven’t seen a Boston cream pie in years, when I first arrived in the US every Diner in New Jersey, and New York had them, and though I no longer go as often to Diners I haven’t seen it in the Diners I do visit, that being said Dunkin Donuts sells a Boston cream donut, a custard filled one with a chocolate glaze top, and my favorite donut.😊🍩
Chef, are you familiar with New York style crumb cake? It's right up your alley. Be sure to use cake flour for the cake & AP flour tor the crumbs. Sometimes its called New Jersey Crumb Buns. Bon Apetite!!!
My son went through a phase where he wanted custard (what we call cornstarch pudding) everyday when he came home from school. And he'd ask for Boston cream pie too. Never could get the filling thick enough to stay between the layers. It ran out and down the sides just like the chocolate. I'm going to try your recipe with the sweetened condensed milk. I've always seen it as a two layer cake. I like that ratio of cake, filling, icing.
