I made the previous version you posted of this last Sunday and it was amazing. My boyfriend said it was the best oxtails he'd ever had, took some for lunch and came home talking about how great they were. Perfect recipe with great instructions, I followed it exactly down to the cooking time the only exception was I used the same amount of green seasoning (as you did here). Didn't need any extra salt or seasoning, it was perfectly seasoned as written. Thank you!
My Caribbean mother used to throw down on the oxtails. She would prepare peas and rice along with cabbage with it. Haitian Epis reminds me of a homemade seasoning my Puerto Rican friend and neighbor's mother used to use in her cooking. She made it from different seasonings and it was the same color green. It's called recao. It has chili peppers, garlic, onions, green peppers, cilantro and other good herbs and veggies in it. Goya sells it in a bottle called Recaito. The Caribbean islands all have similar seasonings for their delicious cuisine. Thanks for sharing this delicious recipe.
I see that infamous Caribbean pot called Caldero. My mother and grandmother used it too. So did my Puerto Rican girlfriend and neighbor's mom. Oxtails, peas and rice, rice and beans, soups and stews are cooked in it. You know what you're doing with your impeccable cooking skills. Love how you put it all together with your different seasonings and herbs. My mouth is watering!!!
Oh I'm definitely making this. We had oxtails when we were younger and the only other time I had them was as an adult on a trip to Jamaica. They were so doggone good. I'm already knowing this recipe is gonna be a keeper.

Another tip cook it one day cool it overnight and more fat will rise and set hard on top and you can scrape it off easier the sauce is even better if you do this xx

I had some Jamaican oxtails the other day and they were too sweet and now I see there is brown sugar added. The oxtails were gross because of the sweetness. Won’t eat at the place again.
