If you put small cut up potatoes in the pressure cooker when oxtails are done and cook an additional 10-15 minutes on sautee it will automatically thicken the sauce as the potatoes dissentegrate into the mixture. This is an alternative to straining the liquid and using cornstarch. Im from the Caribbean try it.
🇯🇲 here 🙋🏽♀️ we don’t put carrots in our oxtail (it changes the flavor) and the main spice that gives oxtail its flavour is Allspice (what we call pimento seeds). Butter beans or Lima beans is what we put in broth when stewing down.
Stop the nonsense, i am Jamaican and i put carrots in my oxtail, it doesnt change the flavor, it taste really good in it. i also use broad beans not butter bean. In fact traditionally Jamaican oxtail used broad beans.
That oxtail is pretty. You don’t need to blend the seasoning just put it in after the meat is half cook to let it cooking with the meat and 👍🏼👍🏼on the searing before cooking. Just add some water and the chopped seasoning and add the broad beans or butter beans even the cannellini beans will work add a little ketchup and let it simmer to the thick consistency you want 👌🏼

I've actually gotten around the cost by substituting turkey next instead of actually using the oxtail. They are still just as meaty and as effective. The flavor profile is just as substantial for the flavor of what you're looking for a traditional oxtail recipe and you get more bang for your buck especially as far as quantity. as a jamaican this was well done and looks delicious!! although we typically dont strain the gravy and finish it seperate, do it all in one pot and the meat sits in it to soak in all that deliciousness 😋
Two things: We don’t separate the gravy, and we don’t add thickeners which can dilute the flavor . We get our gravy thickened by letting it go low and slow and adding the butter beans towards the end or a few diced potatoes. Also, adding chunks of seasoning that are not blended, especially escallion or spring onion helps with the gravy. The beans help with the gravy thickening. We then skim off the fat from the pot.
The first thing that made me know this was gonna go right is that you said oxtail minus the ‘s’ 😅 We don’t typically blend our veggies tho. We transfer everything from the pressure cooker to a pot and then add them with some drained and rinsed butter beans and voila! This definitely gets full marks tho chef! 🇯🇲🇯🇲🇯🇲🇯🇲🇯🇲

I love oxtail, my grandmother used to make it using her own inherited and very simple recipe for a northern English stew. She cooked it twice , slowly over two. days very few ingredients but always gorgeous.
I blend up a half a can of butter beans and add it to the oxtails when they are tender then add the remaining can of whole beans when the sauce has thickened to warm through then serve.
Oh yea delish! That’s what happens when we discover a new delicacy namely oxtails. I grew up on them and can’t believe the cost today. You can usually find some sales on them or even shanks at the Latin grocery store.

Ugh! Why didn’t you post this yesterday when I was looking for ox tail recipes 😂. I just made this for the first time today. I did a traditional beef braise with wine, broth, onions, celery, carrots, etc. I did find some browning sauce which adds richness. Mine came out tender and the sauce was amazing though I didn’t add thickener, just reduced after separating the fat. Next time I’ll try with the Jamaican spices. Also your ox tail looked much better than mine. Got mine from Costco and had to trim a lot of excess fat and silver skin. Where did you get yours?

Oxtail stew is also made in other parts of the Caribbean. Not just Jamaica. We burn the sugar which is the browning method- brown stew. You can also do this with chicken or beef- brown stew. We wash our meat with lime and or vinegar. Potatoes and carrots are also added to the stew. We also make a soup with oxtails- oxtail soup. Very hearty.
Look I appreciate the way you cook it but for me I keep it simple and less expensive I wash mine in cold water and season it with seasoning salt (lawreys) onion powder, garlic powder and a little msg (Chinese seasoning) and maybe cut up some onions sometimes so that’s optional but that’s it!, put enough water to cover meat and boil for 5-6 hours comes out tender and delicious with out going broke
Do you ever use beef consume instead of broth? This seems very expensive to make. The costs of the seasonings together with the oxtails makes this cost prohibitive for many but perhaps one might manage to splurge for a special occasion or holiday meal. I will say that it looks amazing as does everything you cook. Superb!!!

I think problem is this, it’s more appearance cooking than cooking for authentic flavors and great taste, so you’re doing a lot more work for it to look good but not actually tasting authentic or even great like a hearty meal and working harder. What do i mean? For starters, literally a fourth of the browning used was required. Which could have also the place or need for Soy sauce, Beef broth, Slurry which would then next eliminated the need to even make an actual gravy. With certain authentic ingredients like vegetables that you already used to complement the dish, that would give you a better tasting meal, at a cheaper price and even much more healthy and possibly quicker. It’s almost the meal is being made before it’s actually cooked, like a piece of Ikea furniture out of a box. Ik for my taste palet alone i would have took one bite and said “no”, cause the fact that the meat is tender, does nothing for taste.

Parboil carrots and potatoes for 8 to 10 mins. You won't lose the flavors to carrots and potatoes.

You don't need a pressure cooker. I cook mine in a slow cooker for between 6-8 hours. Beautiful.
Just use a crock pot or braise in oven. Pressure cooker is not the way to go bud

You cannot go wrong with Walkerswood Green Seasoning and Walkerswood Jerk Seasoning. You can taste the earthly vegetables and spices. Quality product.

Lil tip…poke the Scotch bonnet (or Habanero in this case) with a fork or knife a few times. If that pepper burst in the pot may be too hot for some.
