I wanna challenge your comment about them finding a better artist -- at 3:19 you can see Ed drawing a Pikachu in his notebook which then comes to life. It's (at least implied to be) Ed's own style, and it plays on a strong nostalgia for those of us who did have notebooks full of crappy drawings we loved.
That’s exactly it; the style of the weird non-anime versions are based off of Ed Sheeran’s actual sketches of Pokémon in his notebooks from his childhood.
Actually, I think the intent was for him to say “You can’t tell me they COULD have found a better artist[…]”, meaning that Ed Sheeran was the perfect choice for the song. It wasn’t about the drawings, it was about the song itself. And I agree wholeheartedly. Ed Sheeran was indeed the perfect choice.
