quiero cambiar la escritura en español con amiga o amigo.
seria mejor que digas: "quisiera conocer a un amigo(a) para comunicarnos en español" o algo así, pues si dices que quieres cambiar la escritura en español, eso suena a que tienes muy mala letra (caligrafía).

"That" is often not needed to connect simple ideas, but it can help clarify more complex ones. I tend to use it a lot with longer sentences.

It is grammatically correct to use it always, but it can be implied.
It's not needed, but can be used. If it is used, (then - another example) it means the same thing as "que", but it's not necessary.
