    Ingredients Required For make Almond Paneer - Serves 5 to 6
    *400 gm /0.8 lb paneer. You can also use firm tofu. You can wrap the tofu in paper towels, put a weight on top and keep it like this for about half an hour to get rid of the water in tofu.
    * 240 gm/ 8.4 oz/ 1 large onion (red or yellow)
    * 18 gm/0.6 oz/ 4 large garlic cloves or 2 tsp finely grated
    * 15 gm/0.5 oz/ 1 tsp finely grated ginger
    * 1/4 th cup / 45 gm/ 1.5 oz almonds
    * 1 dry bay leaf
    * 1 black cardamom (optional)
    * 6 green cardamoms
    * 6 cloves
    * 2 inch length cinnamon stick
    * 1 green chilli (optional)
    * 1 tsp shahi jeera (black cumin seeds)/ 1 tsp regular cumin seeds
    * 1 tsp kashmiri chilli powder/paprika. I later used a teaspoon of paprika but you can also use Kashmiri chili powder instead if you do not mind the heat.
    * 2 tsp sabji masala

    * 1 cup milk
    * 2 tsp salt
    * 1 tsp sugar (optional)
    * 1 tsp kasoori methi (dried fenugreek leaves)
    * chopped coriander leaves (as much according to your preference) or any herb of your choice
    * 5 tbsp oil
    METHOD -
    * Soak almonds in hot water for 1 hr and a half or soak them overnight. You can peel the skin befoe blending if you have any concerns.
    * drain water and blend almonds with half a cup of milk to a smooth puree
    * In a pot bring water to a boil, add onions, cinnamon stick, black & green cardamoms, cloves. Boil on medium heat for 6 to 7 mins
    * Drain water and allow them to cool down. Put in blender and blend to a smooth paste.
    * In a pan heat a tbsp of oil and fry the panner on high heat with a sprinkle of salt and chilli powder till just little golden. Add 4 to 5 tbsp hot water in the pan, switch of heat and allow paneer to sit in that hot water
    * In a separate pot heat 4 tbsp oil. Add black cumin seeds
    * Add finely grated ginger and garlic. Fry on low heat for a few seconds
    * Add a splash of water in the pot and add chilli powder. turmeric powder and sabji masala
    * Fry the masala on low heat for a few seconds and add the boiled onion paste
    * Stir on medium low heat for a few mins until oil floats on top
    * Add the almond puree along with half cup more of milk
    * Add half cup more of milk or water
    * Add salt, sugar, kasoori methi
    * Add the fried paneer and stir very gently taking care they don't break
    * Put a cover on and simmer on very low heat for just 3 mins
    * Garnish with chopped coriander leaves and green chillies if preferred
    * Serve it with naan/paratha/peas pulao/basanti pulao/white rice

    Bumbi that looks superb! I live by myself so I'll probably make the sauce by itself and store it as frozen ice cubes then pan fried 1 person portion of paneer before melting couple cubes of sauce in the same pan. I use soy milk as I'm dairy free (as mush as possible in reality). Oh, I also found that mint leaves in such rich gravy dishes also cuts through the heaviness of it and leaves a very refreshing aftertaste.

    I'm experimenting with the making of vegan paneer using peanuts, (can use almonds too, but peanuts are cheaper for experimental purposes) and when I get it right, (two in the compost bin so far), this looks like the absolute perfect recipe for it. Tofu is a good sub for paneer but it always tastes like tofu and I'd like the dish to taste of something a little different. Can't wait to try this recipe so I'd better crack on with some "cheese" making. :)

    I may be the weird one, but i like rubbery paneer. I love food with interesting textures. Of course if i was making this for the family then I would keep it as conventional as possible.

    Wow, this looks fabulous! I make paneer makhani with cashew butter quite frequently, as it’s one of my personal favorites, but this is a bit different and easier. Plus your recipe has my favorites - garlic and onion - as my paneer makhani recipe is Jain and cannot include them. I’m really excited to make this recipe, but I have to make some paneer first. My local grocery store does not stock paneer, so I’ve gotten into the habit of buying a gallon of milk and making my own. It’s easy, if a bit time consuming.

      @@CurriesWithBumbi Homemade paneer does taste so much better and has such a lovely texture you just can’t get with store-bought paneer.
      But it takes me 45 minutes to slowly heat a gallon of milk. I really need a new stove, but every time I look at them, the prices give me a massive headache. And there are so many options to consider that in the end I give up and just keep cooking with my old stove.

      Always thaw the paneer and use it

      Hi Bumbi, could I use the liquid strained from cooking onions and spices? I thought I could save it and use it when it’s time to add water to Paneer. It seems a shame to discard all that goodness. 😅 Thanks x
