Pasta Grannies discover timpano baked pasta from Calabria!

- This is good for weddings and picnics and every celebration in between. Francesca and Pina live in Migliuso, Calabria and here share their recipe for timpano, a recipe name made famous by Big Night, but actually there are several variations in southern Italy. There are several components, making this a longish recipe but it's very straightforward. Enjoy.

Here you see ... this is what we do in Italy when we put meatballs with pasta. We make small little meatballs and not like they do in America that put big meatballs on top of the pasta. :-)

This is how my nana makes her wedding soup meatballs. It's a labor of love but they don't taste that same if they aren't tiny haha
That was heartwarming to watch. I think I gained 5lbs just watching them cook that. I wonder their ages because they cook that dish like 2 20 yo’s. Mangia!!!
These grannies are just marvelous and even more so, during a pandemic. They are wonderful and deserve to be proud of their timpano. Really great fun to watch each week!

@@chrisdooley6468 "it's not retro, it's original". She probably did buy it in the 60s or got it as a present. That watch was just an expensive, yet affordable, watch back then and is taken care of.
As a kid, I first learned of the timpano from the movie Big Night. It’s hard not to fall in love

As a teen, working in a Greek restaurant we would make "Pastitsio" with a BIG bechamel sauce on top (which means a much thicker, heavier bechamel than a French style). Supposedly, pastitsio, translates into "mess" or "messy" where everything is thrown together.
I love this Italian eclectic version where you use what you have on hand. This is truly a versatile, international dish but I think these Pasta Grannies have perfected the art. The hollow pasta can be bought online or at international supermarkets. Thank you Vicky & Team for a great memory and updated version anyone one of us can throw together.

Ms. Vicky, this recipe is great, & in in the Appalchian region we have a very similar recipe, but we call it baked spaghetti. We boil the spaghetti just shy of al dente. We use a pan like the ladies( except it it is an oiled cast iron pan) & the ingredients layered bottom to top are as follows, pasta sauce, shredded mozz, the spaghetti, fresh spinach leaves, more sauce, meatballs( many), shredded mozz( grated parm reggiano if available) more sauce, & topped with shredded mozz, pan is covered with tented oiled foil, baked at 375 F for 35-45 minutes, is delicious. btw, the pasta sauce is similar to passata sauce but with diced onion/garlic, basil, dried oregano. The Maltese make this as well my grandmother used to make it on Friday’s except we put a layer of dough on the top and bottom and bake with minced beef pasta and tomato sauce onions and garlic with egg

I have a Danish cook book that's 60 years old, that features the same recipe, except it's pieces of pork chops instead of meatballs and salami! It my was favorite as a child!

Grandma just grabbed that pan out the oven, she's pretty hardcore. I've seen it done by line cooks and I've done it when you just wet your hand after you've built up callous' but grammy goes right in, cool video though.
It's obvious that the dish is cold. Dou you see any steam coming from the oven or the dish? No. If the dish was hot it would still be liquid and soupy. And when she tilted the pan approaching the table, if it was as hot as you were so impressed it would be, there'd be a burning catastrophe sliding to the floor.
I bet it's delicious.

it reminds me a lot of the napoleon pasta al forno that is either with penne tortiglioni or rigatoni layed in layers followed with ragu, ragu salsa, boiled eggs, italian salami, mozarella cheese and grated parmasan cheese.

I have always heard (by Italians) the dish called ‘Tímpano’ with the accent on the antepenult.
I have never seen this Kind of pasta recipy.
In Italy you always discover new types of pasta and new recipes. The more you travel around Italy, the more you discover new things ! And this obviously also happens to us Italians. :-)
