    The reason the chicken tenders didn't brown is because you crowded the pan. They tend to steam when crowded together. Spread out they grill to a golden brown.

    As a Chef of 25 years I think I know why the chicken tenders didn’t brown. Crowding the pan causes steam. The steam will not allow the maillard reaction to happen. Also, any time you cook a protein pat it dry. The excess moisture on the protein causes steam. Steam causes gray colored proteins and zero maillard.

    The very first microwave ovens were designed to be used with thin aluminum cookware. I have some manuals from the early 60's that emphasize the superior browning you can get with the metal pans in the microwave. People kept using the wrong pans and so the industry just said screw it and began marketing a whole new line of cookware.

Well I might not get a full size fridge and have to get groceries more often, but after a week of trial test at home, I can basically cook what I want to in my hotel microwaves if all the full kitchens are gone, might anyway, it's so easy.

    • @stevenleonmusic
      @stevenleonmusic 4 роки тому +9

      @meaturama I hate to break it to you but you're dead wrong. I will happily make a video for you if you don't believe it. When you pan-sear or grill steak, the outside is MUCH hotter than the middle. Ever heard of homeostasis? The temperature will eventually balance out and the middle will get hotter, long after you take it off the grill or out of the pan. Just 2 days ago I pan-seared a couple of steaks using a meat thermometer. I took the steaks out of the pan but kept the thermometer in. My steak's internal temperature went from 121°F to 140°F *while sitting on a cool plate*. Like I said, it's because the outer part of the steak was actually much hotter than 140° as it was sitting directly on 400°F cast iron for several minutes. The outside did get cooler over time but the inside got hotter.

    • @DimT670
      @DimT670 4 роки тому +2

      @meaturama the outer part of the steak is hotter then the inside, because it's in contact with the pan or other very high temp surface. As it rests that heat transfers to the inside. This is why you have a grey ring when you sear steaks as well.

    • @evanjohnson1299
      @evanjohnson1299 4 роки тому +1

      @meaturama the desired done-ness is dependent on internal temp. The exterior is hotter than that temp, once removed from heat the external and internal temp will equalize if timed right that will hit the desired temp on the nose. You should always pull meat 5 degrees lower so the carry over will bring internal temp to desired level(Poultry is 165f, medium rare around 130f)

      I highly recommend trying a panini press over a Foreman grill. They're basically the same shit, with the exception that a Foreman is angled to drain grease better, and a panini press is WAY cheaper. As far as the (actually PATENTED) draining angle on the Foreman goes, I like my grease, so that's a negative point for me. If you're a fatass, eat less/better instead of hoping a Foreman grill angle will magically make you slim down.

    • @Aviator168
      @Aviator168 6 років тому +5

      Yes. But both the Foreman grill and the panini press are not hot enough. For an one inch thick steak; I put it in the oven at 250 with an internal temperate probe. When the internal temperature reaches 110, I put fire grilled or just pan seared it.

    • @Mukinrestak
      @Mukinrestak 6 років тому +4

      @Aviator168 If I'm doing steak it goes on the grill or in a pre-heated cast iron pan to sear on the stove and to finish in the oven. I've yet to try any other appliance that does steak properly.

      Sure if you're using aluminum or something else that can't retain heat. If you heat up a nice cast iron pan you can pack that baby to the brim without significant heat loss and sear the crap out of your food. I only recently switched to cast iron and I can't believe what a huge difference it is. My 12" teflon pan can't even take 3 whole chicken breasts without making browning impossible while my 10" cast iron skillet happily browned 4 whole thighs like it was nothing (hell I almost burned them).

Downside is that everything you made would've been faster with an oven or a real grill IMO, but it's great for certain ppl. Perfect for dorm rooms. People do that at restaurants all the time if they’re picky about their food or how they like things cooked (like me and my parents). But I guess you can still tell if it’s cooked or not when you’re cooking it because you know how you like your steak.

       Aviendha Well erm...I also cut into my steak to check if it's done, lol. But then again my family and I don't care too much about the meat resting rule. Or care much about how others will judge how I eat my own steaks, etc. (Reading many comments on the internet, apparently such things are very serious and important in western countries?)
      I mean, what do people want me to be? A steak eating elitist exactly just like them...or else I'm subjectively labeled as "inferior"? Who cares about such judgmental people, lol.

    I have a Rangemate Pro. It takes some practice. Some items do much better if it's preheated longer. Some items do much better if the excess grease or drainage is removed about halfway. Excess margarine will cause steaming so if you like a lot, add it at the end and lit it absorb a bit with the lid replaced. Some items do better with a paper towel over them (be careful, they can catch fire).
    After a kitchen explosion and subsequent remodel, we only used a microwave and an induction burner. We got pretty good at using this gadget.

    • @Pokakana
      @Pokakana 6 років тому

      Yep, Getting the time down was the issue but worked well. The steak was about an inch thick and cooked from frozen. I like my steak medium rare pushing the rare side. I followed the directions in the book and it seems that doubling the initial cooking times for frozen works but also depends on the steak thickness. I just did 2 pork chops about 1 1/2 inches thick each. 6 minutes each side then 3 minutes each side then another 2 minutes each side. Total 22 minutes. Came out excellent. I have a cowboy rib eye I am going to try. It is a 3 1/2 inch thick monster. Also did a grilled cheese sandwich and came out really good!!, added some Pepperoni to it. AWESOME!!! Now am trying to figure out fish sticks and stuffed bell peppers. Throw any other food ideas NOT in the supplied cook book out here. AM parking my Farberware grill !!! Range Mate is a winner so far!!!

    Been using one of these for awhile. The reason it didn't brown is that the higher temp for Maillard comes from longer, sustained microwaving. 3 minutes and 3 minutes won't get nearly as hot as 6 solid minutes.
    That said, steam is still a factor, so if you can leave the lid on tilted open so that it catches splatter but allows air to circulate, your microwave will exhaust some of that steam and you'll get hotter surface temps.

    There was enough of the "try again for another minute" involved for me to just stay with my usual techniques, particularly for cooking chicken. With that device you have to open the microwave, take a thing out, open the thing, flip the food--and then reverse the process to resume cooking. In a regular pan or grill you just flip the food--and you can check the temperature without all the bother. This literally adds nothing but extra time to the cooking process.

      All microwave ovens have different power, so it is not possible to tell perfect time before practical test. But after you got your microwave time, you will not have to recheck every minute your food.
      But I agree I do not like checking this and that. That's why I cook porridge in multicooker. Just set 10 minutes. And wait. Perfect!

    • @Freakinreviews

    I've used what I believe to be the ancestor of devices like this, 80's era Microwave Browning Dishes. Back in the 80s it seems Corning believed microwave cooking might replace conventional oven/stove cooking for many things, and browning dishes were one of the concepts that came out then. Like the Range Mate Pro, you pre-heat the dish without any food on it. (Normally something you never do with a microwave.) A special ingredient used in the bottom will absorb the microwaves and can apparently get the bottom up to 400-degree temperatures. So the dishes, some of which look mostly like standard casserole dishes, essentially have feet to keep the bottom of the dish off the countertop. When used the food is cooked both by the microwaves and by the heat of the dish itself. Aside from Ebay, these dishes are more likely to be found in antique shops then say on Amazon. I suspect they also resulted in the creation of the various one-use grilling surfaces/sleeves used by microwavable foods today. I've got 3 different ones all made by Corning. Some old recipes also talk about using browning sauce for foods that won't brown as expected, in order to get it to look right.
    I've got one dish that's specifically made for 12" pizzas, though the pizzas I make on it are mostly not 12" size. (I usually use par-baked crusts, but I did make one pizza from dough. However, it came on parchment paper I tried to remove without really knowing how, so it's shape was messed up, but it still tasted good. I've also brought home and cooked a 12" ready to bake pizza from the grocery store.) The pizza cooker or other browning dishes and silicon rings would probably work better for sunny side up eggs then the Range Mate Pro since the surface is flat, but it wouldn't do grill marks on steak.
    I've done a grilled cheese on what's considered a skillet, though I did it with the sandwich all put together, flipped it, and put it back in, much like stove cooking. (Now that I've seen this, I may change that and cook both sides at once.) It was almost burnt, but not as bad as yours. There are old recipe books for microwave cooking, however the times need adjustments as they were mostly developed for 700-750-watt microwave ovens. (I've found a conversion chart online.)
    Lastly, one tip I've read about cooking meat like beef in the microwave is that when you take it out, it's internal temperature can actually go up and it will continue cooking for a while after being removed. (I've seen ground beef brown after being removed from the microwave. Though these days I usually just cook ground beef in the microwave until it is browned rather than wait. No special dishes needed.)

    I haven't seen this on TV yet. I'd buy it if it wasn't $80.

      It's my first time seeing this product to.
      It is expensive.
      I still use my George Forman grill I've had for years.

    If you want to grill - moisture kills grilling. Remove the moisture Pat with paper towel. Dry seasoning soaks up moisture too.

    Did anyone say their opinion of how the meat tasted after cooking in microwave? Perhaps I missed it. I'd greatly appreciate it if someone would share their opinion of how it tastes. Thx in advance for replies.

      Incredibly awesome taste! Restaurant quality steaks. Chicken breasts are perfectly tender and juicy.i love making chicken breasts to slice up and make for salads. Grilled hot dogs and brats. Sliced grilled potatoes, steamed vegetables and grilled mushroom and onions. I LOVE MY RANGE MATE PRO! Let your meats rest. I haven't tried the baking yet. I have the oblong and the circular pans. When I get a bigger microwave I will then buy the slow cooker model. I love it sooo much that I'm going to buy a bigger microwave just so I can use the "crock pot pan"! Just for the record: vita mix blender, kitchen aide mixer, a good toaster oven, the pressure cooker XL, a Ninja chopper, a Kerigue Coffee Maker, good sets of cookware, bake ware, knives mixing bowls, utensils, microwave and a Range Mate Pro, You and your cooking adventures are good to go!!!😍❤. Happy Cooking!😍

      Could you get any more bugman? Does your entire life revolve around consumer products?
      I mean clearly you're a payed shill but assuming you're a real person you really need to rethink what's important to you.
