Here’s what I’ve been cooking lately with basic ingredients from my pantry and fridge. These days it’s harder to get out to the grocery store often, so it takes some creativity to make healthy meals that are still delicious. I hope this video gives you some ideas for meals for your family! Tag me on Instagram if you make any of them @meganfoxunlocked .

When you say Mennonites are supposed to make everything from scratch, it just makes me think of when I was in one of my sewing classes in college. One of my church friends who goes to a Mennonite church with me in my town, told me “I feel like I’m putting Mennonites to shame, since I’m not doing a very good job at sewing” 😂 it’s funny that it is an expectation or stereotype of Mennonites to sew and cook all the time, but it doesn’t matter who you are, a person as a person no matter their faith. Everyone can be busy or not do things how they are “expected” to. Thanks for your videos :)

So just wanted to say I tried the German pancakes and it was a huge hit with my family... Was a little afraid of the buttermilk syrup but tried it and it was sooooo good. Everyone loved it. I don't see a need to ever buy the store bought stuff again. Thanks for such an amazing recipe that will no doubt become a regular. It's been a few days and I am already craving them again! 😁

Love you shirt in the intro-
"If you can be anything, be kind."
I needed to be reminded of that today. Thank you. It brought this verse to mind:

For honey mustard dressing, use 1tsp mustard, 1tsp honey, 1tbsp vinegar (wine, Apple cider or balsamic) and 3tbsp olive oil with salt to taste. Much healthier and more delicious!

I make German pancakes, but take them up a notch or two. Instead of glass pans, use cast iron skillets. Melt the butter and throw some thinly sliced apples in the pans. Sauté while you mix the batter. I use freshly ground whole wheat flour to make it healthier. Before I throw it in the oven, I sprinkle a couple Tbsp of coconut sugar on top. SO YUMMY!!

My kiddos were good eaters, would eat whatever anybody'd put in front of them. I believe we accomplished that by encouragement, some might call it manipulation, ha. I'd sing little songs about the vegetables and go all crazy telling people/family how proud I was of my kids' palates, how they'd eat "exotic" (asparagus ;-) etc., wink-wink) things. I started that early and never let them fall into being picky eaters. I really enjoyed this video! Thank you!

We love german pancakes/dutch babies! And baked oatmeal. We also make french toast by the loaf and stick it in the freezer so that we can pull them out one slice at a time for our little man.

The “pancakes” rise because the eggs were beaten properly. You can get fluffy scrambled eggs if you beat them with a fork before putting them in the pan. Yorkshire pudding, soufflé, and toads in the hole all rise or get fluffy because the eggs get beaten before cooking. And if they don’t rise, you didn’t beat them properly. :)

Most of our family recipes call for lard but my grandmother has written in crisco and butter equivalents. My great grandmother couldn’t live without lard, she had it on something at least once a day. I can still remember her sitting at the table in the morning eating lard on her homemade bread.

I substitute olive oil for butter and have a conversion guide from Queen Creek Olive Mill in AZ if anyone is interested.
