My perfect tortilla de patatas recipe! • How I Make My “Famous”...
It’s got a lot of names. Tortilla de patatas, Spanish tortilla, tortilla española! But in the end it all boils down to perhaps the simplest, most famous and most controversial of Spanish dishes.
Do you like it with or without onion? Do you like it runny? If so, how runny? Where is the best place? Is your mother’s tortilla really the best?
Well, Yoly and I decided to settle one thing at least - and that is to decide which is the best tortilla de patatas in Madrid. So he headed to 5 tapas bars famous for their tortilla to decide.
Where did we go?
1. Bar Cerveriz. This is a family run bar run by Carlos and his wife Maria Angeles right opposite the famous San Miguel market. And Carlos is a tortilla wizard. To be honest, this is my go to place for tortilla. Plus, he let us into the kitchen to see how he makes the tortilla!
2. Juana La Loca. This is extremely popular bar serves pinchos which are Basque style tapas. And they also have an excellent tortilla. I used to think it was too sweet, but today is surprised me!
3. Bodega La Ardosa. This place is a classic! And is always so busy! It’s over 100 years old, in the 70s they started making a tortilla de patatas that put them on the map!
4. Taberna Pedraza. A family-run joint in the wealthy Salamanca barrio, this place is famous for making the Betanzos style tortilla… which famously has no onion. And you can only get the whole tortilla - not a pincho. Also, check out the tortilla counter!
5. Casa Dani. Ok, now we’re getting serious. This place was awarded the best tortilla in Spain award this year. It’s in the Mercado de la Paz and it’s famous. And we’ll find out if the title was deserved!!

When my Mom moved to the US from Madrid in the 50s, and had six mouths to feed, she learned to make her abuela's tortilla española with Ore Ida frozen potatoes and chopped onions! Luckily her recipe does just fine with fresh ingredients too. ;) Also, file me under cebollista.
My mother-in-law, whose father was catalán and mother, aragonesa, made the best tortillas de patatas that I've tried in Spain. She learned from them. They used onions, of course, and a certain type of potato. It's been years, so I'm not sure what kind of potato it was. The potatos were cut by using a knife and kind of breaking off pieces. The patatas y cebolla were cooked in a skillet with lots of olive oil, then taken out and drained a little, so excess oil ran off, then put back in the warm skillet with just a little olive oil left in it. The beaten eggs were added, cooked on one side, then turned with a tombatruites. There were ceramics factories in the area, so you could always find a tombatruites. I still have mine. My God, so good!

I have been in Spain for 1 month now and I love it so much -- your videos and Yoly’s supertasting superhero observations make for such enjoyable viewing time! Can you maybe do a video on vegan or vegetarian options in Madrid? I discovered some great ones myself, in traditional places -- would be happy to compare notes! :)
My friend and I just ate at Bar Cervariz. We are not experts but agree that their tortilla is absolutely delicious! We also tried the artichokes, the meatballs and the blood sausage. And we have become fans of the vermouth here too! The owners were very nice but don’t speak much English so definitely plug in google translate so you can really explore the menu. Madrid is fantastic. Thanks James & Yoly for the excellent referrals.

James, Here is a funny story that happened to me many years ago. There were four of us (one Canadian and three Americans). The waiter in San Sebastien came to take our order. Since I was the only one who spoke Spanish, my mates told me to order for them. Like you said the Spanish tortilla is big. I thought that it was like the tortillas in Mexico. So I ordered 12 tortillas. The waiter said "dos o doze?". I said doze! The bugger brought us back a stack of like 70 cms of Spanish tortillas! I really felt like a putz. Saludos to you and Yoli.

Yes with onion and yes runny in the middle....... and although I'm really a purist at heart a little bit of chorizo or morcilla crumbled in makes an interesting variation from time to time.

of its spices ... but when I was dining at El Xampanyet I heard a lady telling her friends they have some of the best tortillas especially the one with chorizo
Being adventurous I ordered it and honestly it’s the most delicious Tortilla I had so far.

My tortilla española has received much praise. A lot of it is down to the quality of the eggs and frying pan. I buy organic AAA eggs that have been laid that same morning. Never tried the caramelised onion option.

After watching your video I traveled to Madrid. And to my surprise I stayed next door to Jauna la Loca and woke up to the smell of onions being Caramelized. I could not wait to have a tortilla, it was the best tortilla I have ever eaten, but then I like migas also.
So many glorious segments to comment on, however I will pick one, on second thought two.
You are so open to differences and diversity, demonstrating that there those who will love onion, those who will not. Secondly, posting maps. Visitors need to find these treasures.

I have eaten a LOT of tortilla ...mostly inside half a barra ...and I have never seen tortilla so wet! I love cold tortilla and make mine with flat leaf parsley and no onion. we also stiffen the egg whites before adding the yolks( not sure why- way I was shown).i definitely agree with you guys on one thing for sure ..salt salt salt ....normally I don't like a lot of salt but without salt a tortilla can be a little bland ....anyway great tortillas, great video, cant wait to get to Granada in July but you have definitely put Madrid on the hit list for next year ...I'll be looking into your tours!

Maybe Casa Dani uses the pan that cooked some blood sausage (i like making my eggs in the same pan as bacon), so I can see that.
We LOVED Cerveriz tortilla!!! Next time we'll try the others. I miss Spain so much!!

Morcilla, blood sausage, usually has onion in it, so it has that fried onion taste too.
You cant beat the enthusiasm of these two. I adore it! And then as a bonus you get the odd spanish lesson, frankly i would like more of the spanish words used and explained... “pincho de tortilla” thanks

As always, great video. When I visited Spain, before youtube, I had Tortilla de Patatas and it was supper dry. Now with youtube and other review channels it really opens your mind up to various places other than the nonsense your tour bus brings you to.
It was really really REALLY sad to see how many of these places were closed permanently when we managed to visit back in February 😢 I hope the fams are doing alright. And thank you so much for sharing your experiences there, it’s like a Time Capsule now

e means "times ten to the [whichever number] power" so e9 means "10 to the 9th". Essentially, the number after the e is the number of zeroes you add to the number in front of the e (unless the number is a decimal).
I love the tortilla at Cerveriz :) I lived in Madrid for a couple years and feel so nostalgic watching this and your Madrid-centered videos. Pez Tortilla in Malasaña is good as well, I recommend it if you haven't already been!

We were in Madrid last week, although we had watched your videos we didnt go to Cerveriz. But we found Casa Dani while we were walking around and we really loved their tortilla. Also their orejas were good and we went their twice and they offered great stuff with the drinks

Just got back to US from Madrid. We were able to try the tortilla at La Cerveriz... was good. Loved their Vermut on tap too!!! Wish we made it to Casa Dani... next time. Promptly try to perfect at home. Eating for breakfast my 1st day back to work. Thx for the tips/recipes/vids!!!
was in Madrid last week and had tortilla at a few of these places...sadly (or maybe conveniently) mine is still the best i've ever had - definitely sad Cerveriz is gone...loved talking people to San Miguel then showing them what a real bar looks like...

En tus videos y nos parecio muy buena, la de la Ardosa me gusto mas en verdad, y me quede con ganas de Casa Dani que quedara para el año proximo! Ordered a "sangria" this weekend (only later realizing that you should order tinto de verano con limón instead) and got a pinxto of a tortilla as a free tapa. Saw Yoli last Thursday night with 4 tourists just south of Plaza Mayor, likely on route to Cava Baja.

Croquetas and tortilla are very particular dishes. They are good test to choose a place where you will find the food good for your taste. If you like the croquetas and the tortilla, probably you will like the main menu of the restarurant.
Just saw the video again (first time since moving to Madrid!), and since I live nearby in La Latina, I went looking for Bar Cerveriz...passed by there about 30 minutes ago (Sept 27, 2024). Sadly, it is long gone. Although, I could still see some of the outline of the lettering etched into the concrete facade. It is now a souvenir shop. Amazing how things change so quickly! I wonder what happened, James and Yoly, do you have any idea?

What a great video!! I’ve noticed a lot of your videos feature savory foods(no problem there haha), but could you make a video about the best sweets/desserts of Spain?

Hay algunas tartas magníficas, como la técula-mécula, la capuchina o la San Marcos, multitud de dulces basados en la almendra y los frutos secos, desde la tarta de Santiago al mazapán de Toledo, pasando por turrones de todo tipo, panellets, mazapán de Soto, etc (casi todos son típicos de las Navidades), y especialidades de cada lugar, como la costrada de Alcalá, la quesada pasiega, el ponche segoviano, la tarta de Elche, los carballones de Oviedo, los bizcochos borrachos de Guadalajara, las innumerables cocas valencianas, bicas gallegas, sobaos, etc. Luego están los postres caseros más típicos, entre los que, además del arroz con leche y las natillas con galleta, están los flanes, cuajadas, la tarta de la abuela, los buñuelos de viento rellenos y luego un montón de "frutas de sartén", muchas veces típicas de determinadas festividades: pestiños, hojuelas, flores, paparajotes murcianos, rosquillas de anís, de naranja o de limón... Ah, y que no se me olviden las filloas y los frixuelos. En fin, que hay miles de dulces. Y no estoy exagerando. Literal. Miles.

Her's a tip for a next video. What about exploring "unconventional" tortillas such as with green peppers (con pimientos verdes), with chorizo, with spinach (espinacas), with funghi (setas), etc.? So yummy!

Hello!!! When i was growing up, my Ukrainian mom would make something similar with left over pan fries and egg. I thought this would be similar, but wow! I was wrong; it was so much better!!! I made it this morning for my son and myself. It almost tasted cheesy actually. Anyways, thank you for the video!
My family is Spanish, but I grew up in Mexico.. I eat tortilla de patata with tortilla(mexicana) de maíz con salsa Valentina. Allí termina el debate de la cebolla mientras los dos partidos me crucifican!! 😅

Amazing video!!! I am not sure if so much runniness in the tortilla is to do with Madrid, here in Valencia we make it much less runny, but shouldn't be too dry either or it would not be nice. Always with onion!!!
It seems a very easy dish to do! But it is not that easy to do it properly.
Potatoes, onion, eggs .. ok, But I've been trying to do like my granma used to do it and ... it is imposible. So many details. The size of the potato, the type of potato, the oil, control the temperature like every second, the right amount of salt, the right onion softness, ... I swear, I never get the point. I cook nice Tortillas but ... from one to ten I say ... my top is a 7. My granmas was a 11.
Do you agree?
It took me a while to master cooking a decent tortilla with my electric hob. I couldn't get it runny. It always ended up dry and boring. However, I discovered that I had to lower the temperature of the oil by half after frying the potatoes and onion in order to allow for the eggs to cook slowly and the flavours to get mixed and enhanced. Turning the tortilla a couple of times is also important to avoid overcooking and keep the inside moist and runny.

James Go to Pez Tortilla! I Had the Tortilla de Morcilla, It has caramelized onions and red peppers, mmmm best ever!. Washed it down with a Buxton Axe Edge IPA (UK) , one of the many awesome draft options that they offer. The draft list is always changing also. Get the racion de croquetas brings 8, They were everything a croqueta should be, cripy exterior, gooey on the inside. Very flavorful and not oily at all. i know yoly yoly oxenfree will love it! you won't be disappointed, Cheers!

When I make a tortilla, I include slightly caramelized onions and plenty of black pepper.
