      Biscotti is a generic name for the type of sweet, this are called Cantucci, although in the original recipe we don't use cranberries and we switch the hazelnuts with almonds depending on the region traditions (almonds in Tuscany and hazelnuts in Latium), we eat them with coffee or dipped in a sweet wine called Vin Santo (Saint Wine)...

      if you don't bake them so long, will it make them raw or chewier? I'm not too interested in crunchy desserts.

    Thanks Barry. This has got to be the easiest biscotti recipe I've ever seen. I was scared to attempt them but now you have given me hope. I'm going to try this out. I've got orange and cherry flavored crasins I'll use. BECAUSE My knuckle dragging family hates zest in anything. Shhhh, don't tell them there is citrus zest in all my berry jams to help them get without using pectin when the berries are extra ripe so don't get well on their own. YOU SHOULD MAKE small batch jam! It's really easy. Just equal parts mashed berries and castor sugar. Cook over med high heat until it reduces and thickens then put into clean jars or plastic freezing jars. If you don't want to do the canning process it's good for a good month or more refrigerated. Freeze it for up to 6 months. Can use fresh or frozen berries. With frozen I add a tablespoon of orange, lemon, or tangerine zest while cooking to help it set to gel. Really easy! TWO INGREDIENTS, 3 IF USE FROZEN BERRIES with the Zest.😘😘

    This is a versatile cookie as far as ingredients go for the flavoring. I used give trays of them as gifts. To make it extra special, dip half the cookie in melted chocolate and when set, sprinkle with icing sugar. When placed on a nice tray it looks awesome.

      Bradley's Baking Bible Just curious, where are you from? I can't speak for all, but in my part of the U.S. (Connecticut) a "brew" is beer. I guess you were referring to coffee, cuz biscotti with beer doesn't sound very appetizing.. or maybe it does! Haha!!

    I love biscotti yay! Me and my mum sprinkle icing sugar over the top usually, it's not as strong as chocolate but it's a really nice finish and we wrap them up as gifts around Christmas :-) I've bisaGOTTI try these ones..... Hope that pun was good enough ....

    Orange, cranberries and hazelnuts are all ingredients that scream Christmas to me (actually, biscotti too) , so I might try to see how it is and then repeat for Christmas! :D

    In Italy these are called Cantuccini, while "biscotto" stands for biscuit. So Cantuccini is their name, while biscotto is the type of sweet. Btw very well done ;)

    Just a quick tip! If you're putting nuts IN something you're gonna bake, toast them first! It enhances the flavour of the nuts and makes them pretty and brown
    Don't do this when you put them ON TOP of something though, cause you'll burn them ;)

      elizabeth rossiter leave out the fruit. Use what you can eat. Nutmeg, cinnamon, ginger, nuts, butter toffee coated sunflower seeds to name a few choices.

      there are soft and chewy biscotti, because biscotti in italian is just the category of sweet, what he made is actually called Cantucci (although we don't use the cranberries)...
