How to make a Lemon Pound Cake | Cube Lemon Overload

    This is a lemon pound cake that is really full of lemon. I've given a modern twist by using a cube silicon mold and thus achieving a shape that's rather different from the traditional rectangular shape.
    ★Mold used★
    Silikomart SF104 Cube
    ★Ingredients (for 8 cube pound cakes)★
    Unsalted Butter (room temp) 125g
    Sugar 120g
    Eggs 125g
    Cake Flour & Baking powder 128g & 3.3g
    Lemon zest 10g
    Lemon juice 10g
    Candied Lemon Peel 60g
    ★Steps★
    1. Beat the butter smooth.
    2. Add the sugar and beat it (cream the mixture). If you are using a stand mixer then use the paddle attachment.
    3. Add about 1/3 of the flour & baking powder and continue beating.
    4. Once the dry ingredients have been mixed well, add the eggs in 4 additions.
    5. Once all the eggs have been added then add the rest of the flour & baking powder.
    6. Add lemon zest/juice/candied lemon peel and mix them well with a spatula.
    7. Evenly fill the silicon mold with the batter.
    8. Bake at 170°C for 20~25mins (Preheat the oven to 190°C)
    9. Immediately after taking the pan out of the oven, give it a shock to release the hot air inside.
    10. Take the cube pound cakes out of the mold and while it's still hot, dip them in syrup (Sugar : Water = 1 : 2)
    11. Apply lemon icing (Powdered sugar : lemon juice = 5 : 1. Feel free to adjust the ratio to reach the desired consistency)
    12. Stick in a lemon juice filled pipette (mix equal amounts of lemon juice and sugar and bring to a boil. Let it cool than fill the pipette) to make it look fantastic.
    ★How to store★
    Store in an air tight container at room temp(20~25C) up to 3 days.

      @@kathytan2736 it is basically lemon peel that has been kind of preserved in sugar. You can either make your own or buy from your local bakery supplies place. It is usually labelled as candied lemon peel or candied citrus peel.

    I made this recipe yesterday and both my sister and I were so shocked at how delicious it was! Instead of lemon, I did an orange and poppy seed version and it turned out so amazing! Thank you so much Chef for this excellent recipe and tips! I'm a pastry chef myself and I was stunned at how fluffy and light this pound cake was. Most pound cakes tend to have a heavier texture and crumb to it so I was surprised at how light this was. Thanks again Hanbit!

    i've tried this recipe , i bake it on a big tray
    i dont divide it in 8 molds.
    i change it with orange zest , since the fruit is too long alrd on my pantry, might be last 4 5 days more .
    still using lemon juice since i got a lemon cut in half on my pantry .
    it turns out very good, its moist, its soft i love it , thanks 🙌🙌🙌🙌

    Thank you Chef Hanbit for this video! I bought the silicon mould after watching your video and I love how easy it is to use! Just made this today and my family enjoyed it. I didn't have any candied lemon peel so omitted it entirely and didn't adjust anything else. Is that right? Also, my cake texture was light. Is it supposed to be light or a little dense? Do you know if I did anything wrong?

    Hi hanbit! Stumbled upon ur recipe and i love it! I tried it out the first time but my pound cakes didnt turn out like a ‘mountain’ shape instead its just a flat square shape :( i still cant figure out what happened hmm hoping u could help!

      hmm...think you need to adjust the oven temperature. You might need to raise the oven temp higher than my commercial oven!

      Hi, you mean the sugar for the pound cake? Adjusting the amount of the ingredients will affect the structural integrity of the pound cake so I don't quite recommend it!

    Chef your videos are so unbelievably amazing ….the editing ,the baking and etc ,but I had a doubt is it okay if I avoid candied lemon zest?.And also ,is it okay if I take the lemon juice and lemon zest using small lemons?and can I avoid the lemon pippette step?or is there any other alternatives instead of the lemon pippette

      Yes, OK to omit the candied lemon zest. I do when I run out of it at home. As for the lemon juice, measure out 10ml. Yes you can use small lemons, medium lemons, large lemons, just measure and weigh them. Yes also, if you don't have pipettes at home, and I am sure not all of us do, you can just serve up the lemon sugar liquid (I actually use lemon and honey) and serve it on the side or drizzle on directly before serving.

    I tried this but the tops were not like yours. Mine were flat. I read you suggested to increase the baking temperature. To what heat do you suggest please?

      Try it by 10~20 degrees. It's best to do it fan assisted!

    Hi chef! I’ve tried these cute little pound cakes, and they taste really delicious, thank you for sharing!
    But my cakes didn’t show as popped as yours, I’ve tried several times but they always turn out to be flat or like a pitched roof.
    I filled the batter round 70% and baked them in 170/170c about 25-30mins (with traditional oven, no fan ones).
    I’m wondering if that can be fixed :(

      oh it's probably cuz of the oven. the heat needs to circulate evenly in order for the batter to inflate properly!
