How To Make Soft and Moist Carrot Cake Recipe

- This classic carrot cake recipe has been handed down through several generations. This dessert is perfectly soft and moist. Cake frosting has a marshmallow-like fluffiness and is absolutely delicious!

Carrot Cake Ingredients:
►4 large eggs, room temp
►1 cup granulated sugar
►1 cup of vegetable oil or extra light olive oil
►2 cups of all-purpose flour * see notes
►1 tsp baking soda
►¼ tsp baking powder
►3 cups (about 1 lb) shredded carrots (grated on the large holes)
Frosting/Decor Ingredients:
►16 oz (2 sticks) cream cheese, softened at room temp
►1 stick (8 Tbsp or 113 grams) of butter, softened at room temp
►2 cups powdered sugar
►1½ cups walnuts, toasted on a skillet and coarsely chopped

Love your recipes and hope you are gradually able to do more videos. I enjoy them so much more by seeing the demo (on how to) than reading on them on the blog. Just a personal preference. With a young family it's certainly understandable why you share more of your recipes and how to's on the blog than in videos.

If you do not want all this oil in your cake, when you shred the carrots put them in the bowl you are going to mix the cake ingredients and store in the refrigerator with a cover on so the liquid separates from from the shredded carrots. Also for this size cake I add 1 tsp each of cinnamon, nutmeg, and vanilla. For us men that do not use all these machines that need to be cleaned it is easy to mix by hand. In Costa Rica I made a carrot cake for 100 people at a wedding and it was the first thing that was totally finished first over the rest of the food and it had 24 pounds of carrots in it.
I hate dry cakes.

I made a carrot cake yesterday but used The Preppy Kitchens recipe and John uses 3/4 cup unsweetened applesauce and only 3/4 cup of oil for cake resulting in a moist cake but I just came across your recipe and its very nice as well. My cake turned out superb yesterday and I'll post re yours soon. My cake went so fast and I only had a small slice out of it. I need another one.
