Turkish Stuffed Grape Leaves Recipe | How to make the Best Sarma

  • STEP BY STEP RECIPE:
    Turkish Stuffed Grape Leaves Recipe (Grape Leaves with rice) | Dolma Recipe | how to make Dolma
    Ingredients
    300 gr pickled grape leaves
    2 cups of rice
    2 tomatoes
    1 big onion
    9-10 branches of parsley
    2 dessert spoon of dry mint
    2 soup spoon of dry black currants
    1 lemon
    4 tbs of cooking oil
    Half glass of olive oil
    1 dessert spoon of salt
    Preparation
    -Start by chopping the onions finely, combine half of cooking oil with half of the olive oil and roast the
    onions in a big pot.
    -Add grated tomatoes.
    - Wash the rice and black currants, chop the parsley finely and add all these in to the pot.
    -After a minute, add dry mint and salt.
    -Add 1 cup of boiling water and boil the mix for one minute.
    -Turn off the stove, put the cover on and leave it for brewing.
    -Wash the pickled grape leaves a little bit to take away the extra saltiness. (If your grape leaves are
    not pickled, just wash them and boil them in salty water)
    -When the rice mix is read and brewed. (The rices should be a bit hard to be eaten, since it will cook
    once again, it should be this way) you can start rolling your sarmas!
    -Take each leave carefully, rip out the little branches, and place some of the rice mix in the middle,
    start rolling one by one. (Hard to explain here, please watch the video)
    -Put aside the big and thick leaves, and use them to cover inside of the pot. So your sarmas won't
    touch the ground or walls of the pot. This will avoid them opening while cooking.
    -Place the sarmas into the pot.
    -Put some lemon slices on the top and cover them all with big thick grape leaves.
    -Cook for 30 minutes on low heat.
    -When it' s done cooking, take of the top covering big leaves and pour some olive oil all around. This
    will make them look shinier and give them extra olive oil flavor!
    -Serve it when it cools down, If you wish pour lemon juice while serving!

    This is a turkish dish called sarma. 'sarma' is a turkish word that means roll. 'Dolma' is also a turkish dish which means stuff. These words have nothing to do with greek or armenian. These are original turkish words. Dolma and Sarma which are pronounced differently in greek, armenian or arabic are common food eaten by allthe nations in middle-east, turkey, balkans and armenia etc since they have lived together at some point within the ottaman so it is very natural that the food culture is shared and everyone adds their own thing. There is no point to be hostile to each other just because of a dish :)

      Take dolma back and give us konstantinoupoli. It is a greek word with greek meaning and there is nothing turkish in it. To change the name is easy but the real meaning it is there. Also instabul means in greek εις την πολη =in the city which sound greek at all. So give us back our history. And if u want history create yours.. With love always, i know that the goverments did that

    people have right to call it turkish because it belonged to Ottoman Empire cuisine. The entire middle east and balkans lands were in Ottoman heritage that is why it is right to say that it is turkish. Even the word meaning of dolma is turkish. It means doldurmak ( fill ) in turkish and sarma means sarmak (wrap) in turkish.

    Made sarma for the first time ever yesterday using this recipe (added a little bit of ground meat, dill, cumin, and ground pepper to the given recipe, and used a plate on top to cover instead of leaves) - turned out excellent! Thank you so much for sharing this!! :) Loved it!

      Turks had No grape vines in central Asia, whereas Armenia was and is still acknowledged as the birthplace for grapes and wine.
      But that is OK, Turks have stolen Greek, Kurdish and Armenian lands, why Not(?) add stolen food recipes, right? It does Not hurt to add to the loot.

    Thank you. When I visit the International Market again, I will look for the grape leaves and definitely make this recipe. The first time that I had stuffed grape leaves was on my visit to Egypt, years ago.

      Have you tried making them? I'm making them for the first time right now, rice etc is finished and I'm about to put it in the leaves very soon. The rice I've made with, aubergine, onion, tomato, garlic, mushroom, dill and chili tastes so good!! I've just added some different ingredients to it than in this video 😄

    For the record .. this is a 100% Turkish recipe that spread throughout the Balkan and Middle east during the Ottoman empire (like many other Turkish dishes) *This is a sort of Dolma* which means filling/filled often called Sarma or Yaprak/Yaprak dolmasi etc. (wrapped / filled leaf etc) ..

    The way my mum pickles grape leaves is; she stacks them on top of each other into a large bucket (must have air tight lid) and then she boils water and ads lots of rock salt to it and tips the hot water onto the leaves in the bucket. Add more salt on top, place a few large river stones on top of the leaves to press them down. Secure with air tight lid and keep in cool place out of sunlight. It keeps for at least 6 months.

    Hi i love Dolma and normally i buy the canned ones. And after seeing this video i have decide to make it. But the thing is i dont like to eat currants, raisins, dried apricots dry berries or any kind dried fruits. So, is that ok if i dont add currant? What can i add for the substitute of currants?

    Can you recommend a brand of grape leaves large enough to roll? I used a brand called Zarrin. They ended up being too small, were hard to roll and broke apart by the end.

    Never ever cook the ingredients before rolling the Dolma. The leafs need at least an hour to cook so they're not tough and stringy. Missing tomato pate in the stuffing, also tomato sauce and lemon Duzie to add on top of the Dolma when it's cooking. Lineup your pot with your favorite meat or potatoes. It absorbs all the flavor from the sauce. Ribs or chicken thighs are awesome to add flavor. Oh. Oxtail is the best.

      They used pickeled leaves instead of fresh leaves.i think thats why they cooked the stuffing first.

      This is a completly different kind of dolma. There are many versions. It is a big mistake if you put butter, meat or anything from the animal. This way must be vegan with a lot of olive oil, onion and sourness. The recipe you wrote is from another region.

    Probably there is a other versions of dolma like Arab Kurdish Armenian or azeri but most of the time people fight over the origins of the dolma which is quite funny😂
