This should be a whole new series. Brad and Vin going around with local foragers from all different parts of the states. Finding what ever they can, berries, mushrooms, and edible plants/flowers. Then teaching awesome ways to cook with them! You would have to go to the same places several times of year to see the differences in what is available based on season.

Leave the mushrooms you're not interested in, in this case anything but a bolete and chantrelle, to sporulate until the end of their life cycle. If you pick them but deem them unworthy to bring home, cut / crumble them up and spread them around the area to encourage spreading of the organism since mycelium can also grow from the fruiting bodies. Not mandatory practices, but it'll make your more experienced foraging buddies smile if they see you do them.
Hey Brad, this was a great episode! I'm from Czech Republic and mushroom picking is our national past time. Czech people are crazy about mushrooms. Every fall the forest roads are lined with parked cars and everybody has a spare basket in the trunk just in case. An average Czech can recognise dozens of edible kinds and often many that are inedible raw, but edible after you prepare them properly. The lore on how to recognise them and how to prepare them as well as many recipes are passed on through generations. We love all kinds of Boletus mushrooms, but my personal favorite are Leccinum, those grow mainly under birch or aspen trees, and Armillaria and Clitocybe (or wood blewit), which are hands down the best mushrooms to pickle! I hope that Americans soon find their way to this amazing past time as well!
From the other side of the Czech-Austrian border, at least in the Wald- and Weinviertel people are crazy about mushroom foraging, as well. Sadly when I grew up there was a lot of panic about mushrooms being contaminated from the Chernobyl accident so we only ever went foraging once or twice when I was a really small child. Sigh.
You’d be surprised how many of us Americans do forage... I myself have learned a decent amount from forager friends of mine. Foraging can even make you money, especially during morel season.

Used to go pick chanterelles with my dad whm I was a kid. About a couple of pounds in a couple of hours. Then we would sauté them in butter and finish them up with heavy cream on some pasta. 2 part pasta to 1 part mushroom. Can't beat that
Thankfully there's a bounty of them around my area in the summer. They are my fave fungi! I love to oven steam them (wrapped in foil) in butter/oil w white wine + just a touch of garlic - then put them over (herbed) pasta, of course. Heaven!

I highly disagree. Leaving the stipe can rot the mycelium and risk destroying the whole colony. Twisting and removing the entire fruit body is much better for the organism.
Small addendum to the whole about being careful with mushrooms, and making sure you have someone with you who knows what they're doing: Please be aware that sometimes even professional mushroom foragers can be wrong, so please be very careful when foraging for mushrooms, if you're even slightly in doubt about a mushroom, either throw it out, or eat it while someone else is with you who doesn't eat it. Mushrooms can be lethal.

Story time! When I was taking AP biology one of the only units I remember is the one on fungi. This is because fungi are everywhere and are actually related more closely to animals than any other kingdom. The mycelium (basically the roots of a mushroom and the main body of the organism) can be huge covering miles underground and you’re pretty much always breathing in thousands of spores. Therefore I eventually came to the conclusion that if fungi evolved in the right way they could totally decimate us. (After all there are plenty of parasitic fungi like the infamous Ophiocordyceps unilateralis) So in conclusion fungi rules us all👍🏻

As a Latvian, it is so weird to see people go mushroom picking and not recognizing them, because for us it is like a national sport haha. Everybody goes to the woods since they are, like, little children and the best mushroom spots are usually kept as large secrets, even from family members lol. That mushroom at around 9:32 is called "Bērzlape" in Latvian. I dunno how it is called in English but it's Latin name is Russula claroflava. They come in all types of colours and here, in Latvia, the red one is more common. ALSO a BIG NOTE: you are supposed to use the knife to CUT the mushroom, not just wiggle and pull it out. You are not using the end part of it anyway, so leave the root part alone so it grows soo many more mushrooms out of there.
I am not even able to identify mushrooms in the shop but I have always heard that you should cut them to avoid hurting the mycelium...That's the very reason you can find mushroom knives with specific curved blades
Juan---People are very divided on that issue. I'm a "cut" person, so you're not damaging mycelium, but also so that you put less dirt in your basket/bag that you're gonna have to clean off later.
some mushrooms you can cut but we prefer to pull this one as much of the delicious stem is underground. this does not harm the mycelium in any way. there have been multiple studies on this. no difference whether you cut or pull.

Chanterelles/Girolle are my favorite mushroom, I will never forget the first time i foraged some in the south of france, the SMELL that came of them immediately after being plucked, was just incredible, a smell so complex and rich like nothing I had ever smelled, and at that point I had had many types of mushrooms including fresh black and white truffle, but the chanterelle has such an incredible smell and taste that it left its mark forever
Lyfted Legend---The psychedelics? Or Amanita muscaria, which is likely what Brad was talking about? The red caps with white dots? Eaten raw, they'll make you puke...then high. Eaten cooked, might still make you sick then high. Boiled twice in salted water, sliced, cooked, and eaten, supposed to be safe. Dried, made into tea with a little lemon...get you high. And they're perfectly legal.

Here in Germany foraging for mushrooms is a pretty common thing to do. I did it A LOT with my grandparents and my mum. One thing my grandfather first taught me is to never rip the mushrooms out of the ground but rather cut it off. By doing this, the roots stay intact and the mushroom will regrow.
The mushroom Brad found by himself growing on the decaying log is a species of Russula, some edible and some will definitely make you sick, he was smart to leave it alone
But he shouldn't have ripped it out in the first place. Nothing spells out "city dwellers" more than when you see perfectly fine mushrooms ripped out and thrown away. Russulas are wonderful for soup but you need to know what kinds grow locally.
It is definitely genus Russula, not Leucopaxillus. Notice the 'brittle gills' (the moniker for this genus) when Brad drags his knife across them. Some Russula species are extremely spicy when raw and need to be boiled in a change of water to make palatable, but there are no toxic members of the genus Russula. Even the species Russula emetica has actually been proven to be non-toxic, just unpalatable unless properly prepared.

Small addendum to the whole about being careful with mushrooms, and making sure you have someone with you who knows what they're doing: Please be aware that sometimes even professional mushroom foragers can be wrong, so please be very careful when foraging for mushrooms, if you're even slightly in doubt about a mushroom, either throw it out, or eat it while someone else is with you who doesn't eat it. Mushrooms can be lethal.

Story time!
When I was taking AP biology one of the only units I remember is the one on fungi. This is because fungi are everywhere and are actually related more closely to animals than any other kingdom.
The mycelium (basically the roots of a mushroom and the main body of the organism) can be huge covering miles underground and you’re pretty much always breathing in thousands of spores.
Therefore I eventually came to the conclusion that if fungi evolved in the right way they could totally decimate us. (After all there are plenty of parasitic fungi like the infamous Ophiocordyceps unilateralis)
So in conclusion fungi rules us all👍🏻

As a Latvian, it is so weird to see people go mushroom picking and not recognizing them, because for us it is like a national sport haha. Everybody goes to the woods since they are, like, little children and the best mushroom spots are usually kept as large secrets, even from family members lol. That mushroom at around 9:32 is called "Bērzlape" in Latvian. I dunno how it is called in English but it's Latin name is Russula claroflava. They come in all types of colours and here, in Latvia, the red one is more common. ALSO a BIG NOTE: you are supposed to use the knife to CUT the mushroom, not just wiggle and pull it out. You are not using the end part of it anyway, so leave the root part alone so it grows soo many more mushrooms out of there.

I am not even able to identify mushrooms in the shop but I have always heard that you should cut them to avoid hurting the mycelium...That's the very reason you can find mushroom knives with specific curved blades
Juan---People are very divided on that issue. I'm a "cut" person, so you're not damaging mycelium, but also so that you put less dirt in your basket/bag that you're gonna have to clean off later.
some mushrooms you can cut but we prefer to pull this one as much of the delicious stem is underground. this does not harm the mycelium in any way. there have been multiple studies on this. no difference whether you cut or pull.

Chanterelles/Girolle are my favorite mushroom, I will never forget the first time i foraged some in the south of france, the SMELL that came of them immediately after being plucked, was just incredible, a smell so complex and rich like nothing I had ever smelled, and at that point I had had many types of mushrooms including fresh black and white truffle, but the chanterelle has such an incredible smell and taste that it left its mark forever

Here in Germany foraging for mushrooms is a pretty common thing to do. I did it A LOT with my grandparents and my mum. One thing my grandfather first taught me is to never rip the mushrooms out of the ground but rather cut it off. By doing this, the roots stay intact and the mushroom will regrow.

The mushroom Brad found by himself growing on the decaying log is a species of Russula, some edible and some will definitely make you sick, he was smart to leave it alone
But he shouldn't have ripped it out in the first place. Nothing spells out "city dwellers" more than when you see perfectly fine mushrooms ripped out and thrown away. Russulas are wonderful for soup but you need to know what kinds grow locally.

It is definitely genus Russula, not Leucopaxillus. Notice the 'brittle gills' (the moniker for this genus) when Brad drags his knife across them. Some Russula species are extremely spicy when raw and need to be boiled in a change of water to make palatable, but there are no toxic members of the genus Russula. Even the species Russula emetica has actually been proven to be non-toxic, just unpalatable unless properly prepared.
