When you're cooking a traditional dish, "it tastes like something else" is the second to last thing you want to hear. (The last is, of course, "I hate it.") Also, while I kind of get Nick's reasoning, it doesn't really hold up for an experienced cook. Yes, straight up boiling meat is bland, but when "boiling" means "braising on the stovetop in a very flavorful liquid," it actually comes out very flavorful and soft. Pan-frying makes it tougher and only par-cooking in the pan actually makes the beef absorb less flavor from the sauce. For a different dish, fully cooking in the pan, then putting the still-hot beef in the sauce and letting it cool a bit could make it even more flavorful, but I'm not sure that's something you can do and stop have it be gyudon.
