  • How to make a deliciously rich and creamy Chicken Tikka Masala. This recipe is easy to make and the flavours are amazing. This Tikka Masala recipe served alongside some fresh rice and naan bread is the perfect flavour combination.
    Serves - 4
    Ingredients -
    The Marinade -
    1kg (2.2lb) - Chicken Thigh
    1 Cup (250g) - Plain Yogurt
    2 Tbsp - Minced Ginger
    2 Tbsp (3 Cloves)- Minced Garlic
    2 tsp - Garam Masala
    1 1/2 tsp - Cumin, Ground
    1 1/2 tsp - Turmeric Powder
    1 tsp - Chilli Powder (Optional)
    2 tsp - Sea Salt
    1 tsp - Cracked Black Pepper
    The Sauce -
    2 Tbsp - Vegetable Oil
    2 Tbsp - Clarified Butter - • Clarified Butter Quick...
    2 - Onions, Medium Sized
    2 Tbsp - Minced Ginger
    2 Tbsp (3 Cloves) - Minced Garlic
    1 1/2 tsp - Garam Masala
    1 1/2 tsp - Cumin, Ground
    1 tsp - Turmeric Powder
    1 tsp - Coriander Seeds, Ground
    400g (1 Tin) - Tomatoes, Diced
    1/2 Cup (125g) - Tomato Puree (Passata)
    1 1/4 Cup (310ml) - Heavy Thickened Cream
    1 Tbs - Brown Sugar
    1 tsp - Cracked Black Pepper
    1 tsp - Sea Salt Flakes
    Coriander (Cilantro) To Serve
    Naan Bread To Serve

    2 Cups (450g) - Basmati Rice
    4 cups (1 Litre) - Water

    When you boil the rice, you can also add a cardammom seed & bay leaf it gives the rice such a nice aroma 👏🏻

      Yep, definitely! This is a personal preference. You can add cinnamon and star anise too for a full flavour combination.

    Just made this tonight. Tasted awesome although I think I had the pot on too high a heat. We have an induction cook top so that might effect things too, I dunno. The marinade left a burnt coating on the bottom although the chicken was fine. I made an executive decision and after the chicken was all browned I continued the process in a pan. Disaster averted. My pot is still soaking but I think I’ll be able to clean it. Note to self, next time use a lower hear setting. Other than that, another nice Saturday night dinner, thank you for posting. Cheers Baz

      I use a 3000 grit whetstone to sharpen a dull knife and swap to a 8000 grit whetstone to refine the knifes edge. Before every cooking session or when I’m in the professional kitchen, I hone my knife on a shun steel. The Shun steel is specifically made for the Shun knives I use. I will be making a video on this soon.

      Hey! Thank you very much. The knife indeed is a Shun Premier 7” Santoku. I use this knife in a commercial kitchens as well as making these videos. The durability is amazing. Obviously every knife (no matter how cheap or expensive) needs to be sharpened regularly but, the edge on it is amazing. I highly recommend!

    Hi Jack... can i recommend you start a blog or website where u post descriptions of the method alongside the ingredients? The videos are great to get a look, but when making it its tiresome to have to rewind to find out what order things are done in.

    Looks yummy! While we're almost all confined, could you please try to think about nice recipes to do with pantry basics (pastas, rice, basic spices...)? That could be a nice challenge for you! :)

      Of course. This recipe is one of them. It uses common spices, onion, garlic, ginger, cream, tinned tomato, chicken and rice. This is also great to make in large batches to feed you for many days. I have a whole load of recipes planned out and will be released over the coming weeks/months in relation to this current situation 😊

      All ghee is clarified butter but not all clarified butter is ghee. Traditionally ghee is melted for longer than clarified butter to allow for a nutty flavour and darker colour. Some ghee also has spices added it to it for extra flavour. If you buy ghee from the supermarket, it usually is similar to the clarified butter I’ve made and used in this recipe.

    Can you use waxed paper instead of cling film?? And since I’m one those without a gall bladder would using a mild chilli powder give flavour without making me sick?? I can’t tolerate spicy food anymore 😖

      zip-lock bag, tupperware container with a lid, a plate that covers the top of the bowl or baking/parchment paper.

      You can use baking paper, aluminium foil, a plate turned upside down, and a damp tea towel. With whatever you use to cover it, ensure it’s fully covered and no air is getting to it otherwise the chicken will dry out.

      You sure can. It won’t be classed a tikka masala anymore but it will have amazing flavour regardless. 👌

    Observation: this is essentially butter chicken curry but instead of one large piece you cut it into thirds. Either way it's delicious.

      It will depend on the type of olive oil. If you use extra virgin or an olive oil with strong flavour it won’t taste good

    How do you heat it up again? Microwave?

      You can heat it up in a microwave or pan. I personally don’t use microwaves, I always reheat in a pan

      Glad you enjoyed it. I never said the rice is steamed. I left the lid on the pot to allow for the steam. This rice is boiled rice. However, they are both very similar methods. 😁

      @@ChefJackOvens Not very similar. Steamed rice never makes direct contact with water. Boiled rice on the other hand, is covered with water. The people here would have me beaten if I called one the other. Lol.

      My stainless steel pot is exactly the same as a Dutch oven just stainless steel instead. Most of my recipes can easily be done in one too

    I tried this tonight. My advice would be to put in half the cream and then add the other half gradually while you taste.
    I followed the recipe and found the cream masked the spices making it a little too mild for my taste.

    Save the environment somewhat by using dollar store shower caps (5 or 6 to a packet) to cover bowls instead of cling film. Can be washed and used ad infinitum. 😸

    Instead of using the plastic wrap, just put a plate on top. AND ALWAYS WASH YOUR RICE! 😇

      The plastic wrap helps lock in the flavours whereas using a plate will allow for air to escape (obviously it’s not good for the environment though). I did wash the rice but didn’t show it or say it which is a mistake on my behalf. Sorry about that! 😊😊
