Moist Chocolate Mayonnaise Cake

  • I learned to make this cake when I was in 1st year college. I baked it a few times and then forgot all about it. I remembered this recipe again when I had to come up with a recipe that uses mayonnaise.
    This cake is so easy to make because you just need to put everything together, mix and then bake. You also don’t need to add any butter or eggs because the mayonnaise will take of that.
    You can bake them into cupcakes too. You can make them with or without icing.
    This cake is moist, chocolaty, and has just the right amount of sweetness.
    I hope this will be one of your go to recipes.

    Thank you so much, Chef. I baked this chocolate today for Father's Day and tried the cake left on the parchment paper and oh my, it's so rich, very moist, and just melts in your mouth. I can't wait to eat a whole slice!!! Thanks for sharing! By the way, I used the table cream from Walmart and it's perfect!

    how many hours do i cool the ganache? the icing falls down. it does not have the same consistency as shown on your video..

      I cool it for half a day if you live in the Philippines because it is very warm. If you are in a rush, you can chill for 15 minutes. Remove and stir to blend. If still too runny, put back in the chiller for another 15 minutes. Please try again.

    Good evening Chef. I made one and the cake are fine but when I placed the ganache on the 2nd layer the cake fell. what went wrong? is it because the cake is still warm? i follow your instructions that the cake should be at room temperature before putting ganache. How many hours for the cake to be at room temp? thank you and hope to hear from you the soonest.

      Either the cake was still warm or the second layer was still raw. I cool the cake for about 2 hours. Please try again and let me know how it went. Good luck!

    Hi, Chef! Do we need to wrap and cool it in the fridge to achieve moistness?

      No ma’am. This cake is naturally moist. If you refrigerate it with frosting, no need to wrap. If you put cut portions of the cake in the ref, you need to wrap them.

      After baking and letting it cool down to room temp, other people prefers to wrap the base cake using cling wrap and let it sit in the refrigerator to achieve moistness of the cake. This is for the recipe that uses oil/milk/eggs. I was hoping this recipe doesn't really need all those extra efforts 🥲 thank you very much, Chef! Will definitely try it ❤

    how long can it stay moist? will it harden if put in the fridge?

      Like any cake, it will firm up when refrigerated. It will stay moist for 3 days if you keep it covered inside the refrigerator.

      Hello Chef, I tried the cake and it is perfectly moist, but i will ask something how to achieve a flat cake? I used 10x13 rectangular pan and double the mixture. The cake is not that flat. Looking forward for ur reply

      Because this is a Chocolate Mayonnaise Cake. Mayonnaise is used to replace fat and eggs in the recipe.
