You’ve kept us waiting too long, Mac! Glad you’re back.
Loved the video. Tetsu sounds like a very intelligent, knowledgeable and passionate person. He has experience with a range of different beverage types, access to his own casks and locally sourced barley, and seems to be very intuitive about what casks to consider using and how the conditions might affect the maturation process. He doesn’t seem interested in rushing the process or about making big profits - it seems to be more about making the best product he can. I’ll definitely be interested in trying one of their whiskies if I can get my hands on them in the coming years. I mean they must have some decent potential if Mac is willing to invest in a cask 😉
Can we also please show some love to Mac and his camera person for the absolute stunning scenic shots at the beginning and end of the video. What a beautiful and awesome location for a winery and distillery - that sunset would never get old! Also, who else has a bomb shelter to keep their casks maturing in?! So damn cool!

This is great to see and learn about. I work part time in a whisky bar in Susukino and while we have Maoi's new makes, I haven't had a chance to visit. I still hope to one day but in the meantime thanks for highlighting it!

Bought a cask today after chatting with them on the phone. Will also give me a great reason to go back up to Hokkaido again in the summer on my motorbike. Happy days

I was thinking about you and your channel when I tried my first Yuza cask strength single malt from 2022 and a dram of Kanosuke single malt at a bar on the weekend. Have you had these?

Very interesting. I guess they will know soon if the zero angels share is a benefit. Normally a net loss is required to force interaction with the wood and its driven by a temperature difference over time.
You may as well be dropping the wood from a barrel into a refrigerated stainless tank. At that point its flavouring, not aging.
There is temperature differential, but the enviorment is very humid. Let's see what happens over time!
I wish to visit Hokkaido. One of the reasons is the views.

yep and very first visit too that must makes you feel both special & super excited for the result in say 5 years from now@@KanpaiPlanet kinda no rush production "alla Daftmill" (ok 11/12 years bit too much maybe) or say regarding the 5/6 years like Isle of Harris or Ardnamurchan...

hi again Mac@@KanpaiPlanet forgot to say that among other places in the world where whisky is matured or just stored in ex-bunkers, there is one in France regarding the Moon Harbour brand, a distillery located near Bordeaux...(ok not my favorite one, so I've no whisky from them except samples, but...) 😉
