I think his goal is to have all the portions the same uniform rectangle with the same thickness. Everything else seemed too measured for the fish to be a hacked job. I have seen restaurant videos where chefs purposefully skin far away to avoid the blood line. You only cut once. No need to trim again later. Saves time.

Either the chef was inexperienced or poorly trained, or else, didn't care whether he was doing a good job or not. That such cavalier behaviour is prevalent says once more that the amount of good food wasted in this nation is not seen to be an issue here. With so many people around the world struggling to find enough safe food to eat, and many starving or on the edge of it, this doesn't just seem wrong, it's downright cruel and criminal!
@@Oyashio202 Whilst I don't agree with their attitude towards marine species ( basically if it lives, it can be eaten) I do respect the Japanese for their treatment of their food. What's worse, a people who eat every seafood going, but treat that seafood with respect and use every safe part of it they can, or a people who eat many marine species and show little regard for a precious resource whilst preparing and cooking it, and end up tossing a significant portion of perfectly edible food away? I know where my vote goes.
@@Oyashio202 define "destroying". they have a country of 125mill + people who primarily live off of seafood, because they don't have the space for massive commercial farms. there's some terrible practices in fishing, but that is their main staple food.

I hope the chef that prepared the salmon see’s this video and all the comments on how he butchered the salmon. What’s the point in having expensive knives when he can’t even fillet a salmon properly. Even hitting the blade while trying to skin the salmon smh. Buying expensive knives but don’t even have the skills to go along with it is just sad, especially as a professional.

Nope, Nope, the Salmon filet was wasted in how poorly it was cut. Then when they chopped the mushrooms that's where it ended for me. The horseshit wasn't washed of the mushrooms, that is a no, no for me. Some may think that's okay but I don't want to eat cooked horse feces.
