    Pak Tong Kou/ Chinese Sugar Rice Cake
    Pak Tong Kou/ Chinese Sugar Rice Cake (Lunjiao Cake)
    Ingredients A:
    250g rice flour
    230ml water
    (Mix well until there are no powder particles.)
    Ingredients B:
    160g sugar
    280ml water
    2 colorful leaves
    (Boil into sugar water, let cool to about 30 degrees)

    Servings: : 15 Mandarin Orange Bun (with red bean paste)
    Ingredients:
    300g all purpose flour /Pao flour
    2g yeast
    2g baking powder
    25g caster sugar
    150g carrots (2 sticks)
    80ml water
    5ml cooking oil
    180g Red bean paste filling (12g each)

    To decorate the stalk:
    10g flour with a little pandan juice/vegetable juice, knead into dough

    Lotus bun/lotus miku bun
    Yield: 10 lotus miku bun
    Ingredients:
    250g Pau flour / all-purpose flour
    75g fine sugar
    4 g yeast
    120ml water
    15g corn oil
    A few drops of red pigment
    ---------------------------------------------------
    100 Plus /ice-cream soda/7 up)

    Ingredients:
    3 eggs
    200g fine sugar
    240 g cake flour /all purpuse flour
    160ml isotonic drink (100 Plus /ice-cream soda/7 up)

      可以用普通面粉,不会发也许是酵母的问题

    How long must I knead Mi Ku dough before letting it to rest for 15 min? If I did not use carrot to make orange bun must I increase the water? I just want to make normal pau using this recipe. Tq

      normally knead until the dough is smooth,about 10 minutes. If the carrot 🥕 remove, need to add more water on it.

      @@amychow4780 是的,锅子和火候也是很大影响的,如果有其他锅子,试下换其他的高蒸锅,然后面糊要倒要8-9分满。大火蒸。
