My Perfect Potato Salad // Tasty Bit 89

  • I have never tackled potato salad because I felt that it was something that should be left to the veterans.
    It just happens that I have reached an age in which mu mu's seem pretty comfortable and that I need to have my own potato salad recipe.
    I love elements of German, Colombian and Potato salad, so, like Dyson and his vacuum cleaners, I set out to invent, The Perfect Potato Salad.
    I think that a great potato salad should make you want to get up at three in the morning, grab a fork and eat it straight out of the tupperware, perhaps with a few crumbled potato chips on top.
    Claudia's Perfect Potato Salad
    THE NITTY GRITTY
    4-5 medium waxy potatoes, peeled, chopped and boiled 20-30 minutes with a ton of salt .
    2 eggs hard-boiled and chopped
    3-4 scallions chopped
    5-10 slices of crisped bacon chopped
    2 T curly parsley minced
    3-4 hearts of palm chopped (or fresh blanched peas... for texture)
    THE MAGIC DRESSING
    1/4 cup Mayo
    1/2 cup non-fat Greek yogurt
    1.5 T Dijon mustard
    1.5 T whole grain mustard
    2 t sugar (I use raw and organic from Trader Joe's) key ingredient
    1 T white vinegar (or a little more)

    You may also add a sprinkle of cayenne pepper if you so desire.

    Claudia, you hit all the right notes on this. I love the inclusion of hearts of palm--are they marinated or plain? I'm sure most people will go, "Oh, that is something special, what is it?" Hope you get back to posting some more!

      Judith Loue the hearts of palm are nice, but mostly bring texture. I think blanched peas would be great too and would add more color.

    Looks and sounds delicious. I am familiar with German, and Yankee. What constitutes Colombian?

      gleichg Colombian is more like German, but also contains Vienna sausages! At least my family's contained them. I love them... so bad.
