Thank you so much to all of you who found this technique on making ribs useful. I have received so many kind comments. I don't mind the critiques and I love questions too, however, occasionally I receive a mean or inappropriate comment and I ask you, before you type... ask yourself if you would say what you are writing if I was standing in your kitchen. I love to allow folks to comment and I am pretty open about not deleting comments, but I ask you to please try and be respectful.

Okay... I just made this. But used my own spice blends... And wow! WWOWW! Fall off the bone tender! Instead of the juice I used beer, hot sauce and brown sugar. Freaking amazingggggg!!!

Yeah, my big concern with this method is the loss of the delicious smokey flavor of low & slow ribs. Maybe liquid smoke could help.

    Great video! Nicely done!
Question! Wouldn't a Turkey baking bag work just as well? The foil forms a bag to hold in the steamy moisture a trukey baking bag should the same. What do you think?
Thanks for the great video's! ;)

I´m cooking this ribs just right now for Christmas (wait, I´m posting from my husband´s acc but anyways...), I think this is my 3rd or 4th time doing this and my familly just looove this meal every single time I make it. I set the timer for the first hour and as soon as it rings, I put my potatoes in the oven and by the time I finish basting and caramelizing the ribs, my potatoes get all done... also, about 20 mins before I turn off the oven, I trow some veggie kabobs. We just can´t wait to eat all that yumminess. Oh, by the way, I cut those liquids in half and that´s just enough, less messy that way.

Hello there! So glad it worked out for you. I love that you used your own spice rub and liquid. That is what is great about this technique, it is about the technique. The rest is up to you. Please share this with your friends on Facebook and Twitter if you can. I am going to try the white wine and mustard! I don't remove the membrane I think it helps the ribs to remain moist, but that is just a theory. I don't score it either.

Oh my! These were amazing. I just did not want to waste nearly 2 hours of propane for the gas grill, so I cooked exactly as you said. Then instead of the broiler, I put them on the grill to brown them up and get some bbq sauce on them. The family went nuts over them. The only thing that was missing was the smokey flavor, but I think next time I will add a few drops of liquid smoke to the pineapple juice. Thanks for sharing.

jean cole Hi there Jean... I tried to find your Thanksgiving comment to reply to, but couldn't! Thank you so much for your comment. It gave me one more thing to be very grateful for. I was really impatient the other day and made the ribs in a pressure cooker... they turned out great in 25 minutes! They are slightly more great with the steam pouch method, but satisfied my craving. Happy holidays to you and your family!

Ive done your rib technic but i used hard cider and a dry rub i made myself and a custom made bbq sauce wish i can post a pic but i didn't broil them after i grilled it to make them smokey but i did the tender part in the oven great job i must say and you got a great smile bien bonita 💓

    Claudia,
I just now found you after watching Alton Brown's bb back rib video. lol I have to say your ribs looked so tender and moist, they had me salivating. Secondly, or maybe firstly, I absolutely adore your personality. I could watch you for hours. Your instructions are very clear without being exhaustive. You got yourself a new sub and I got a new awesome cook to watch. (It doesn't hurt matters any that you are very easy on the eyes as well)

Great method. You're so right about the juice. I usually use a pineapple, mango, orange mix of juice. I do a similar sort of thing but instead of just juice i mix in some of the BBQ sauce i'll use later. Then i add the jus to my sauce do what you said about reducing it. Only critique on yours is -not enough sauce. If you don't need a wash cloth & towel when you're finished you ain't been eatin' BBQ ribs. :)

Hello, I prefer using Purity Organics, citrus passion, but they are aren't making that anymore. I feel like the tropical juices with a little acid to them help to break down the pork as well as compliment the sweet flavor of the meat. I am not a food scientist though. Anything is better than just water. I would consider the flavors of the rub and sauce when thinking of what liquid to use.

I don't add sugar because I use fruit juice... usually I just add a little bbq sauce, but you don't have to. Simply reduce in a pan until you get the desired thickness. Both the gelatin from the ribs and the sugar from the juice with thicken the glaze naturally.

This is almost the exact way I oven cook my ribs... Only difference is I put a small metal rack under the ribs, the racks I use look like cookie racks and are about 1/4" tall... Makes it easier to brown the ribs, all you have to do is remove the top foil while in the oven and turn the broiler on for 5-10min

  • @BradRemillard

These are outstanding!. She is right about the best ribs you will ever have using this technique. I made sure the oven stayed at 350 with an oven thermometer. I put them on the BBQ after 1 hour 40 minutes instead of in the oven.
This is by far the best way to cook ribs. Alton Brown should try these.

You mentioned that you use pineapple juice? Pineapple juice has enzymes which act as tenderizers for the meat. Allowing for a shorter cook time. I think that's a pretty cool and clever shortcut! I'll have to try this some time!

Nice video! I use a similar method. I use a dark beer for my liquid and add a little liquid smoke as well. I then finish off the ribs on my gas grill, adding bbq sauce only after I flip the cooked sides over...preventing it from burning. Always a favorite at bbqs.

I used your technique yesterday for finishing off ribs from the smoker and they came out phenomenal. A common method for smoked ribs is to smoke for a couple of hours followed by wrapping up in foil with liquid to finish off. I could never quite get the foil step just right until I saw your video. One thing you should have mentioned -- if you are having guests, make twice as much as you think you'll need because they disappear fast.
