  • Our Mango Salad is an easy to assemble healthy side dish for your dinner buffet or serve it as a lighter main dish. Tune in tomorrow for our homemade vinaigrette. Enjoy!
    Summer Mango Salad
    Ingredients:
    2 c arugula
    2 c radicchio
    1 bunch cilantro, chopped
    7 scallions, thinly sliced (use white and green)
    1/2 c mango, cleaned and medium diced/sliced
    4-5 slices cured meat, julienned into thin strips (we used salami)
    1 small wedge of manchego cheese, julienned into thin strips
    1/4 white onion, small diced
    1/4 c chopped pistachios
    On a large platter, add arugula, radicchio and cilantro, tossing it all together lightly. Layer scallions and white onion on top, followed by chopped pistachio, salami, manchego and diced mango. Put in the fridge while you make the dressing. When your guests arrive, you'll drizzle the dressing over the salad.
