- Traditional Greek pork souvlaki recipe
For 8 skewers you will need:
The zest from 1 lemon
¼ cup of fresh lemon juice
¼ cup of olive oil
3 cloves of minced garlic
1 tablespoon of dried oregano
1 tablespoon of white wine vinegar
2 pounds of pork tenderloin cut into 1-inch cubes
1 onion cut into 1-inch cubes
Salt & pepper to taste
Skewers
Pita bread and tzatziki sauce.
Tzatziki sauce recipe: • Easy Greek Tzatziki Sauce
In a large bowl combine the lemon zest, the lemon juice, the olive oil, the minced garlic, the oregano, and the white wine vinegar.
Combine all the ingredients well and add the cubed pork tenderloin. Using your hands, mix the pork and the marinade
Cover with a lid and let the pork marinade in the refrigerator for at least 2 hours.
Before you take the pork out of the refrigerator, soak the wooden skewers in water for 10 minutes and chop the onion into quarters.
When ready, thread pork, a slice of onion, pork, a slice of onion and alternate until there is only an inch left at the bottom of the skewer.
About half way through, start preheating the grill to 400 degrees Fahrenheit.
When finished, arrange the skewers on the grill, close the lid and grill for about 12 minutes. I like to set a 3 minute timer and rotate them 4 times to make sure they are evenly cooked on all sides. And this is when I season them with salt and pepper to taste.
Once the pork is cool enough to handle, peel it of the skewer on a warm pita bred, add a generous amount of tzatziki sauce and enjoy.
