    I’m in awe every time I watch how y’all can just look at a carcass and know where the knife cuts need to be to extract a certain cut. Truly amazing and now with the cooking part, it’s always a great watch

    I smoked my first ever beef brisket with the black and hands down the most amazing flavors from a seasoning didn’t even need sauce with that flavor great job guys

      Would you recommend the black flavouring? I only ask as I’m in the U.K. and want to order some but obviously because of the import p/export costs too the U.K. it’s a lot more expensive for me to buy than a American. So just want to make sure the black flavour is the best one before I spend anything.👍🏻

    I have a killer cole slaw recipe for you guys to try. Throw roasted red peppers, onions and carrots and your preferred spices (I do a thai version, a chinese version and a pineapple version as well) into a food processor along with the mayo and vinegar and sugar. Whiz it up. Cut up red and green cabbage into 1/4 inch squares. Throw it all together. You will thank me.

    For some reason I always thought everything from a bison was going to be way larger than a cow. Love to see a bison rib roast.

      Smaller, even the tenderloins. The have a bigger skeleton where as cows have more meat to bones ratio.

    As a European butcher the bison looks a lot like our native grass fed breeds like belgian blue. Just smaller and a bit darker. Hope i get the chance to butcher one one day and taste it!

    Jeremy knows what he is doing, no doubt about that. I think that I would like the bison brisket with the coffee/molasses. The trick with the wrapping looks like it helps to keep the moisture in the meat.

      Wrapping and slicing skills need some work. Needs to use more paper and wrap tighter but over all good work

    Just picked up my first brisket today little 6lb goin on the smoker tomorrow with some black & hollywood .... nice looking meat from a farm stand .. got a bunch of strip steaks .. stew meat & 25lb of ground beef .... meat from this location is very good we have bought it a few times .. but its an hour & half ride onne way ... but worth it as half the cost of local

    Bison is always a but sweeter regardless of cut. For Bison steaks a simple wine reduction helps balance that while still allowing it to shine.

    I accidently made the best brisket I have ever tasted one time. I had one of those long type charcoal grills that I put the brisket on offset with hickory smoke. Mean time drinking heavily and fell asleep. Woke up at 5:30 AM thinking OMG my brisket is a meteor! Ran out to the grill took it off....best brisket I have ever tasted ...true story lol.

    Have you guys ever done a bison corned beef or pastrami? I would love to see that, I make beef corned and pastrami all the time, but have little experience with bison. A lot less fat in the bison I am assuming....

    I just did a brisket with Black. The bark and color are perfect. I put extra coarse black pepper on mine but I might try some Brock as well next time. Please tell me the groundhog was worse off than Charlie after the battle.

    I would actually buy a bison brisket in most cases. Perfect size for my family, and I'm sure it's a good price point. I would, however, make a beef brisket for larger gatherings.
