Coco Cooking - How to make Sapasui (Samoan Chop Suey)

    Easy to make Samoan Chop Suey or Sapasui. Follow along with this simple recipe.
    .
    INGREDIENTS:
    Meat: Beef (chuck or rump steak) or chicken (portions or boneless) or Pork.
    Vermicelli Noodles (buy in packets)
    Garlic
    Ginger
    Mushroom Soy Sauce.
    .
    INSTRUCTIONS:
    Peel & slice onion & garlic
    Add oil to the electric fry pan or pot
    Cut meat into bite size cubes, add & stir fry with onion & garlic
    Peel & crush ginger
    Add ginger and enough Mushroom soy sauce to cover the meat then stir & leave to cook for a few minutes.
    Soak vermicelli in COLD water to soften & then trim with scissors.
    Add Vermicelli and 1 or 2 cups of water
    Cover and leave to cook for 5-6 mins
    Stir and serve!

    Sadly to say, Samoans lack flavor when they cook! I always use powder stock (depending on the meat, but I prefer chicken thigh fillets or turkey tail/muli pipi) when cooking the meat as a sub for salt (salt sometimes makes it too watery) with lots and lots of garlic, onion, shallots and ginger and some pepper (dont be stingy). I use either olive or sesame oil to cook it. My sauces. I always use the dark soy that penetrates with heaps of color (dark soy is only for color, not so much flavor). I also accompany it with authentic asian oyster sauce and some Indonesian ketjap thick sweet soy sauce to balance out the flavors and add more flavor. Water depends on how thick you want it but I usually fill the pot half way or a bit more. I always use the vermicelli from the asian stores that is in like a pink net package (I think it may be the Vietnamese kind). This vermicelli has the best texture and soaks up most of the liquid from the sauces and water and goes really nice and translucent when its cooked and you dont pre-soak it because e pala ai le lialia. Just add it into the broth when its starting to boil up. Remember, sapasui is very fragrant when theres heaps of ginger pieces in it. You really need to have good flavor in the food! I dunno but maybe thats just my asian-samoan side comin out lol especially when its food, im very pedantic and love to cook food that not only looks good but equally tastes amazing. I come from a big Samoan family that really knows our flavors when it comes to food and we always look to enhance the quality in our cooking.

      I do have some questions;
      do you fry the meat instead of boiling it?
      Do you mix the sauces together before adding it?
