    Making tamales with my friends in New Mexico was a joy! My family in New England now want to make homemade tamales. This video is clear and precise---perfect !for bringing a bit of the southwest to New Hampshire!

    Loved it! I made them a few years ago and put the masa to the “floating in water” test. Mine flunked, but still tasted great. I noted you didn’t bother with this step.

      Does suet mean something different in UK? In US beef suet is beef kidney fat.
