Phew- thank you for just getting down to business. I’ve watched a lot of these and really appreciate that you show rather than tell! Why should I have still been searching for pruning videos after watching so many? Because I was still confused. Now I’m not- thanks!
Also, props for filming THE WHOLE TREE and yourself from a decent distance. I notice it’s weirdly hard to find video or even pictures of the full-grown version of some trees and plants I’ve ordered with any sense of scale. But here it’s clear where exactly the cuts are happening. Bravo.

So what?? You got a knee and a waist line don't you?? 🤔
The tree will do just fine with cuts at lower heights.
This type of pruning is intended to create a fruit tree that can be picked by hand without the need for height assisting equipment.
If you are a midget, your cuts will need to be lower than other people, to enable you to reach the fruit when it's ripened. ☝
(I understand you probably joking but I thought I make a point.) 😉

Is not suitable for cherry growing but plums grow well . I would like to try growing cherry trees on drawf rootstock . Minus 5° Celsius is our usual temperature but occasional it will get minus 12° Celsius. Possibly will consider trees burned to Spanish bush style under cover. A small row of maybe 5 trees .

This is super cool demonstration! I planted a 2 year cherry tree 14 month ago in may (so now in it's third year) It has been cut by the nursery at around 125cm (a bit more than 4 feet) with some branches. I can choose for open centre or central leader but actually I don't like both options because the cherries will be too high to hand pick! (I should have thought about that earlier ...;-) I would love to have your model, but I read below that I will kill the tree if I would cut it at knee hight this winter, correct? Could notching work to stimulate side branches and if I see side branches come out , than cut the tree above the side branches?! I am told that apple trees have sleeping buds that you don't see but will be activated if you prune. This is not the case with cherries? A lot of questions .... I reallly would like another structured tree with hand picking options. Any suggestion how to change my tree?!

Can I safely prune off the top meter or so at knee high just above desired leafed out shoots this time of year to start training the to this method?
Do you pull/cut off all the trunk side shoots below the cut just leaving the top 2 or live shoots near the cut?
Or should I wait a year let the roots set and get established then wait until fall/winter to make cut now that spring has arrived?
We are also going into a 3-5 day dry spell with no rain, does that help if I can safely make the cut?

I'm now scared to cut the trunk at reach height because some major branches grew on top of it. Cutting below where it's, green as in where it's solid woody, takes away the main growth node where the plant puts it's time energy and resources into getting leggy and tall.
Seeing it doesn't have to compete for sunlight or nutrients there's no reason the tree would ever want to be 12+meters tall.
It benefits him in the long run having a full canopy at ground level where it's nice and pickably also he can inspect and spray and take care of business. It's similar to topping a pepper plant.
