If a chef wants to get good scores, they better not be smoking. We see way too many contestants just smoking like chimneys, how are they expecting their taste buds to survive
They do so poorly because they all smoke. I don't know how anyone that calls themselves a chef can smoke. Smoking completely changes how you taste things.

Root celery was the most bizarre thing to miss for me as it has such a strong distinctive taste, absolutely nothing like carrot aside from the texture. Missing it is borderline mistaking horseradish for carrot. Makes me think they found the blandest root celery in existence and had them taste that

To be fair to Scott (S12), he got two right (one of which is proven on the show to be fairly difficult to guess correctly in radish), and his guesses for the other two weren't THAT far off (pecan for macadamia nut & lima beans for green beans). Meanwhile, not only did Jason get none right, but his guesses were so far off that they were almost comical.
