Lol the lady with the gumbo had to have burned that roux and did something to compensate. I’ve done that and yes it does have a gritty, mud-like, burnt taste that pretty much takes over the entire dish. You literally can’t taste anything else but that and it’s horrible

They only have 45 min to cook including cutting up ingredients from what I recall so I imagine she cooked it too fast
I make gumbo quite often, but it takes like 3 hours. It probably tasted so bad because she thought she could make a 3 hour dish in 45 minutes
